MY CHOCOLATE OBSESSION!

My love affair with chocolate began over 20 years ago and is still going strong. There are 3 things in life that I love, besides my husband and family: Chocolate, Traveling and the Beach.

My obsession with chocolate began with Snickers bars. I was eating a king size snickers every day. There was something about the smooth milk chocolate, nougat and peanuts that just satisfied my soul.

However, soon Snickers were not enough. I added Mounds and Reese's peanut butter cups to my menu. I didn't need their king size bars, just a taste now and then.

I was addicted to chocolate. I still am.

MORE ABOUT MY CHOCOLATE PASSION 

HOLIDAY BAKING

It has been awhile since I talked about my chocolate obsession. But two holidays are coming up that will test our culinary skills in the dessert department. Thanksgiving and Christmas are the two main holidays for baking chocolate. I save all my chocolate making for Christmas.

At Thanksgiving we usually have my grandmother's chocolate pie (a little different recipe than my mothers).

Chistmas is the time that I make my decadent chocolate torte and chocolate covered Peanut butter balls.

The torte is a 4 layer confection that has a pound of dark chocolate cake covered in chocolate and heavy cream icing. The cake lasts forever, but freezes well.

The CCPB balls combines two wonderful things together; chocolate and peanut butter. A few other ingredients makes them taste great.

THE JOURNEY CONTINUES 

Upscale Chocolate

After several years of consuming and stashing as many candy bars as I could, a new product came along. It was Godiva Chocolate. (In the '80's Godiva was new). I happened to visit one of their stores in our area.

I bought a 1 lb. box and brought it home. My husband could not believe I spent $25 on a box of candy. It took me less than 2 days to consume the entire box.

That box of chocolate was ecstasy. My craving for Godiva increased, but since we lived so far from a major city I would could not indulge in these delicious treats as often as I wanted.

I curtailed my consumption of lowly milk chocolate and indulged Godiva as often as I could. I went so far as to concoct reasons to visit that major city over an hour away just so I could buy a box.

Once I indulged in those decadent chocolates I never looked back.

INDULGING IN MY PASSION 

The Dark Side of Chocolate

Those days of trying to purchase a box of Godiva chocolates took a turn. I found that the selections of deep dark pieces called to me.

For anyone who has had a box of Belgian chocolates, Godiva or any other brand, know that those creations have a silky smooth texture and scrumptious centers no matter if the candy is milk, white or dark chocolate.

However, the milk and white chocolate represented the shallow end of a pool. To immerse myself in my passion only deep dark chocolate would do.

I was still relegated to only Godiva for many years, but as the popularity for sophisticated chocolates grew, so did my choice of brands. I bought those upscale chocolates, but those boxes only held a few of those deep dark morsels that would satisfy my chocolate craving.

In my desperation to have more dark chocolate, I had to purchase larger boxes or several small boxes of chocolate. I shared the milk chocolate pieces with family, but became a tigress when anyone dared to touch my dark chocolate.

I made the ultimate sacrifice. I left those wimpy milk and white chocolate confections behind and entered the dark side for good.

This product is great. Acai berries have wonderful health properties, but I reccommend this product for its help with wrinkles, weight loss and elasticity.

Any woman over 35 will want to use this product for weight loss and wrinkles.

CHOCOLATE RASPBERRY COBBLER 

Chocolate Raspberry Cobbler
I love chocolate and raspberries. During the summer we consume fruit cobblers regularly. I found a way to add 2 favorite foods together. This cobbler has a small amount of creme de cacao, a chocolate liquor and a small amount of my favorite raspberry wine.
Chocolate Raspberry Cobbler
1 package pillsbury pie crusts
1 1lb. bag of frozen raspberries
1/2 cup sugar
1 tspn vanilla
2 Tbs. creme de cacao
1 Tbs. raspberry wine (I use framboise from Low Country Winery)
12 oz dark chocolate morsels (I use ghirardeli dark 60% chocolate morsels)Save 1/2 cup to melt and drizzle over cobbler
Butter
Sugar

Mix together frozen raspberries, sugar, vanilla, creme de cacao and raspberry wine in a large bowl. Let mixture sit until raspberries have mostly thawed. Once the mixture is cool, in a 11x8 baking dish unroll one pie crust and cover the bottom of the baking dish. Add the fruit mixture. Add the chocolate chips. Unroll the second pie crust and cover the mixture, tucking and pinching edges. Cut slits in the top pie crust. Cut a few past of butter and put on top pie crust. Sprinkle with sugar. Put dish on top of a cookie sheet. Bake in 350 degree oven for 45 minutes. Drizzle with melted chocolate.

VALENTINES DAY 

Another excuse to each chocolate

Valentines day is an excuse for me to indulge in one of my favorite passions, CHOCOLATE.

I love for my husband to get me a box of my favorite chocolates. I love Godiva, Rose City chocolates, Lindor, and even Dove chocolates are fine. My Valentines would not be complete without me making something for chocolate for that day. I can think of nothing better than my homemade chocolate truffles, strawberries and champagne. (I need my husband to spend this day with, so I guess I wll add him too).

YOU CAN NEVER HAVE TOO MUCH CHOCOLATE

CHOCOLATE PEANUT BUTTER BALLS RECIPE 

GIVE THESE TO YOUR FRIENDS AND FAMILY FOR CHRISTMAS

This recipe makes hundreds of medium size balls or about 100 large balls. I make the medium size balls and give them away to family and friends.

EVERYBODY LOVES THESE!

2 sticks, salted butter
1 box of powdereed sugar
1 28 oz. jar of Jif brand peanut butter
1 tspn vanilla extract
1 12 oz. package of 60% ghirardeli dark chocolate morsels OR
1 12 oz. package of nestle semisweet chocolate morsels
1/2 bar of parafin

Soften butter at room temperature. Mix together the softened butter, peanut butter, powdered sugar and vanilla extract in a large bowl.

Put bowl in the refrigerator until mixture is cold. (rolling them into balls works better with a cold mixture). You will want help with the children or family here. Have powder sugar on hand or cooking spray. Either cover hands with powdered sugar before rolling balls or cover hands with cooking spray so the mixture will not stick to your hands. I use powdered sugar.

Using a spoon, to get out the mixture put in the palm of your hands and roll the peanut butter mixture into balls. Put on parchment lined cookie sheets. Once a cookie sheet is filled, I usually have 2 11.5 x 8 inch cookie sheets filled, put the peanut butter mixture back into the refrigerator overnight or until cold.

Put water in the bottom of double boiler and bring it to a boil. Add the chocolate morsels and parafin to the top of the double boiler. Stir until chocolate and parafin are mixed together and well melted.

With a fork, toothpick or spoon drop peanut butter balls, one at a time, into the mixture and place back on the lined cookie sheet. Repeat until all the peanut butter balls are covered with chocolate.

Refrigerate. Once the chocolate has hardened put in airtight containers.

GOING OVER TO THE DARK SIDE 

I never looked back

Switching to dark chocolate was easy. The rich decadent confections melting in my mouth was proof enough that dark chocolate satisfied my cravings better than milk or white chocolate.

Fast forwarding to early 2000. I was in chocolate heaven. Discount stores, grocery stores and the internet jumped on the dark chcolate bandwagon along with candy stores.

At last, I was able to indulge in my passion without breaking my bank account. My cabinets are filled with dark chocolate cocoa, raspberry filled chocolates, dark chocolate morsels, fine dark baking chocolate and more.

One of my favorite afternoon snacks is dark chocolate morsels and cashews. It is a quick pick me up.

Life would not be worth living without chocolate truffles. My truffles are a rich culinary confection of several different dark chocolates, chocolate liqueur, mexican vanilla and spices.

My chocolate indulgence would not be complete without mentioning my decadent chocolate torte. It is too rich to discuss all the ingredients, but the cake alone has over 1lb. of chocolate.

CHOCOLATE PIE RECIPE 

MY MOTHER'S CHOCOLATE PIE RECIPE

Now that I have tempted you with my chocolate obsession why not make a pie. Here is my mother's microwave version her chocolate pie. It still tastes great, but cuts the cooking time in half! That way we can enjoy pie sooner!!


2 cups milk
1 1/2 cups sugar
3 eggs separated
4 tbs cocoa powder
4 tbs of flour
1 1/2 tspn vanilla extract
1 stick butter
1 frozen 9 inch pie crust; prepared

Preheaat oven to 400 degrees farenheit. Once the oven is preheated cook pie crust to a light golden brown. Remove from oven. Let stand until needed.

In two small mixing bowls separate the yolks from the whites. Crack the egg and allow the egg whites to drop into the bowl separating from the yolk. Put the yolk in the other small bowl. Continue until all 3 egss are separated, making sure that no yolk gets in the whites.

In a large mixing bowl combined sugar, cocoa, flour. Mix together well, getting out all lumps. Slowly add 1/2 cup of milk stirring constantly with a whisk, so that any lumps can be stirred out. Add the 3 egg yolks, mixing well. Continue to slowly add the rest of the milk while whisking the mixture. Put the bowl in the microwave and heat for 5 minutes on 60% power. Take bowl out and stir thoroughly. Return bowl to microwave and reheat for another 3 minutes on 60% power. Stir once more and if need be return to microwave for 2 and 1/2 minutes on 60% power.

Once the pudding is thick, whisk in the butter and vanilla. Make sure the butter is melted and incorporated before pouring into pie crust.

TO MAKE THE MERINGUE

Beat the egg whites until stiff peaks form. Add 4 tbs. of sugar to the mixture and a 1/2 tspn. of cream of tartar to the egg whites. Beat to incorporate.

Pour chocolate pudding mixture into the prepared pie shell. Cover the pudding mixture with the meringue. Place in the oven for 3-6 minutes to brown the mernigue. When cooled add a few dark chocolate shavings.
