Royal Icing
Use Royal Icing to decorate cookies once they are cooled. This icing dries hard and you can do just about anything you like with it. Smear it across the surface of a cookie and it will dry like a smooth ice skating rink. Add any food coloring to the icing before you frost the cookie. Mix small batches so you can add color to use in details. Keep small bowls of various colors at the ready and use a clean paint brush.This technique is great for making cookie favors or when making cookies as gifts.
Royal Icing Recipe:
Ingredients
* 4 egg whites
* 4 cups sifted confectioners' sugar
* 1 teaspoon lemon extract
Directions
1. Beat egg whites in clean, large bowl with mixer at high speed until foamy (use only grade A clean, uncracked eggs). Gradually add sugar and lemon extract. Beat at high speed until thickened. NOTE: When dry, Royal Icing is very hard
Sprinkles
Many types of cookies lend themselves well to sprinkles - especially sugar cookies!Add sprinkles after the cookies are cut out and before they are baked. They won't stick if you try to add the sprinkles after you bake the cookies. Sprinkles are substantial enough to withstand the heat, so don't worry about them melting in the oven.
Sprinkles are fun when making kids cookies. They can make their very own works of art. Just make sure you have them decorate the cookies in a pan that has edges so the sprinkles don't roll away!

Chocolate Drizzle
Once cookies are baked, you can drizzle them with melted gourmet chocolate.Melt chocolate chips in the microwave, being careful not to scorch the chocolate. Wait until the cookies are cooled and then use a teaspoon to drizzle on chocolate over the tops of the cookies. Allow the chocolate to set and then you can refrigerate or serve them right away.

Sanding sugar is sold in cookie and cake decorating aisles in the craft store. You can use these marvelous colored sugars that look like the finest beach sand to decorate cookies.You'll want to sprinkle on the sanding sugar before the cookies are baked. The sugar will stand up to the heat of the oven and the cookies will come out looking professional.

Egg Wash
If you are going to decorate your cookies before you bake them, you can use an egg wash (1 well-beaten egg with 1 tbsp. milk) and food coloring. It's not recommended that raw eggs be used in any food product as the risk of salmonella is there. But if you want to mix up a batch of egg and food coloring, you can create lovely colors to paint onto raw cut out cookies.Paint with a clean paint brush and then bake the cookies as the recipe calls for. You can also use this to give your cookies a tint when using sprinkles for a little extra color.
