How to use Hershey's baking cocoa for cakes, brownies and other goodies

One baking staple in my kitchen cupboard is Hershey's cocoa. I keep it on hand at all times and use it for everything from cakes to hot cocoa to chocolate syrup. While many recipes recommend using melted baking chocolate, that is often messy and expensive. Hershey's cocoa can be easily adapted to many recipes that call for semi-sweet or unsweetened chocolate.

On this page I will share some of my tips for using Hershey's chocolate as well as some of my favorite recipes. Hershey's performs well in these recipes and adds a rich chocolate taste.

How do you substitute Hershey's cocoa powder for solid chocolate?

measuring spoonsThe website What's Cooking America has a handy substitution chart that explains how different chocolate products can be used as substitutions for each other. Here are some ways to substitute cocoa powder.

Semi-sweet chocolate: Use 3 tablespoons of unsweetened cocoa powder, 3 tablespoons of sugar and 1 tablespoon of butter, margarine or other shortening for every 1oz of semi-sweet baking chocolate.

Sweet baking chocolate (like German's): 3 tablespoons of unsweetened cocoa powder, 4 tablespoons of sugar and 1 tablespoon of margarine, butter or oil for every 1 oz of sweetened baking chocolate.

Unsweetened chocolate: 3 tablespoons of unsweetened cocoa powder and 1 tablespoon of oil, margarine or butter for every 1oz of unsweetened chocolate.

Dutch process cocoa: 3 tablespoons unsweetened cocoa powder and a pinch (about 1/8 teaspoon) of baking powder for every 1oz of Dutch process cocoa.

Hershey's Perfectly Chocolate Cake

Some years ago I received a chocolate cake recipe in a baking newsletter. Well, I printed it out but little did I know that Hershey's Perfectly Chocolate cake would become my favorite chocolate cake recipe. This makes an excellent layer cake and I've also made it into cupcakes and sheet cakes. I've actually never made the chocolate frosting that goes with it. I usually make a simple vanilla frosting as it sets off the chocolate better. Or, I just dust it with powdered sugar as it is also good without frosting.

While this page is about chocolate, it is also about being thrifty by using powdered chocolate instead of solid. So, I have to give a shout-out to Amy Dacyczn (pronounced "decision") who, for many years published "The Tightwad Gazette". One of the most useful things about this book is that it includes recipes for how to make your own versions of commercial products from scratch, like seasoned salt or flavored rices. Mostly, this book includes lots of practical advice for happily keeping your family fed, clothed and happy on a budget- and as we all know, that includes chocolate!

The Laura Ingalls Wilder Country Cookbook

This is one of my favorite cookbooks because the recipes make great use of pantry staples. While I often make the Saucepan Cocoa Brownies I also make favorites like the American Chili recipe. Laura Ingalls Wilder's Gingerbread was one of her specialties and I never let a Christmas go by without making it!

    Hershey's baking cocoa is a staple in my house. If I find a recipe that calls for it...I always have it right on hand. Informative lens.

    Excellent lens! Hershey's really is the best. I made the mistake of picking up the store brand once and - yuck! As a baker before I started working online I've tried several other brands, too. Nothing beats Hersheys!

    Nice tips and delicious-looking recipes! I live very close to Hershey, PA...in fact, we're going to Hersheypark next month. Hershey's Cocoa is the only brand I use! :)

Use baking cocoa to lower your blood pressure

In his book The Blood Pressure Cure author Robert Kowalski claims that chocolate helps lower blood pressure. He suggests haveing a nice cup of hot chocolate to relax yourself in the evening. Or, stir a spoonful of powdered chocolate into your morning cup of coffee along with some milk, cream or sugar. Delicious! Since I read that tip I now add chocolate to my coffee every morning. Mmmm... I can't vouch for any scientific findings about this, but I do know that it makes me happy--which in turn can lower my blood pressure.
