How to use Hershey's baking cocoa for cakes, brownies and other goodies

How do you substitute Hershey's cocoa powder for solid chocolate?
The website What's Cooking America has a handy substitution chart that explains how different chocolate products can be used as substitutions for each other. Here are some ways to substitute cocoa powder.Semi-sweet chocolate: Use 3 tablespoons of unsweetened cocoa powder, 3 tablespoons of sugar and 1 tablespoon of butter, margarine or other shortening for every 1oz of semi-sweet baking chocolate.
Sweet baking chocolate (like German's): 3 tablespoons of unsweetened cocoa powder, 4 tablespoons of sugar and 1 tablespoon of margarine, butter or oil for every 1 oz of sweetened baking chocolate.
Unsweetened chocolate: 3 tablespoons of unsweetened cocoa powder and 1 tablespoon of oil, margarine or butter for every 1oz of unsweetened chocolate.
Dutch process cocoa: 3 tablespoons unsweetened cocoa powder and a pinch (about 1/8 teaspoon) of baking powder for every 1oz of Dutch process cocoa.

Hershey's Perfectly Chocolate Cake
Some years ago I received a chocolate cake recipe in a baking newsletter. Well, I printed it out but little did I know that Hershey's Perfectly Chocolate cake would become my favorite chocolate cake recipe. This makes an excellent layer cake and I've also made it into cupcakes and sheet cakes. I've actually never made the chocolate frosting that goes with it. I usually make a simple vanilla frosting as it sets off the chocolate better. Or, I just dust it with powdered sugar as it is also good without frosting.(Photo by Abel Leemans)

Homemade Chocolate Syrup
If you like chocolate syrup but it doesn't fit your budget, try this homemade chocolate syrup recipe. Hershey's cocoa works well in it and the recipe produces about 2 cups. Amy Dacyczyn originally published it in The Complete Tightwad Gazette.

Ingredients
- ½ cup cocoa powder
- 1 cup water
- 2 cups sugar
- 1/8 teaspoon teaspoon salt
- ¼ teaspoon vanilla
Instructions
Add the cocoa powder and water to a saucepan. Stir over low heat to dissolve the cocoa. Add the sugar and keep stirring to dissolve the sugar. Simmer it for 3 minutes over medium heat - be careful to not let it boil over. Stir in the salt and vanilla and let the syrup cool. Put the syrup in a clean glass jar and store it in the refrigerator. This should keep for a few months.

Saucepan Cocoa Brownies

I like this brownie recipe because it can be quickly made from pantry staples - including Hershey's baking cocoa. It is not gooey or sticky, but a bit dense and cakey. It holds up well when packed in lunches and you can freeze them for later.

Ingredients
- 1/2 cup of butter or margerine
- 6 tablespoons unsweetened cocoa
- 1 cup granulated sugar
- 1/2 teaspoon vanilla
- 2 large eggs
- 1/4 cup flour
- 1/4 teaspoon salt
- 1 cup coarsley chopped nuts
Instructions
Preheat oven to 325 degrees. Grease an 8x8 inch pan and line it with wax paper.
Combine the cocoa and butter in a medium saucepan. Stir over low heat until butter is melted. Cool.
After the cocoa mixture cools to lukewarm, mix in the vanilla and sugar. Then, beat the eggs in one by one. Mix in the flour and salt but only stir until the mixture is just combined. Add the nuts and stir.
Pour the brownie mixture into the pan and bake for 25 minutes. The top will be dull. After it cools you can turn it out on a rack, remove the wax paper and cut it into squares.

- Hershey's baking cocoa is a staple in my house. If I find a recipe that calls for it...I always have it right on hand. Informative lens.

- Excellent lens! Hershey's really is the best. I made the mistake of picking up the store brand once and - yuck! As a baker before I started working online I've tried several other brands, too. Nothing beats Hersheys!

- Nice tips and delicious-looking recipes! I live very close to Hershey, PA...in fact, we're going to Hersheypark next month. Hershey's Cocoa is the only brand I use! :)

Use baking cocoa to lower your blood pressure
In his book The Blood Pressure Cure author Robert Kowalski claims that chocolate helps lower blood pressure. He suggests haveing a nice cup of hot chocolate to relax yourself in the evening. Or, stir a spoonful of powdered chocolate into your morning cup of coffee along with some milk, cream or sugar. Delicious! Since I read that tip I now add chocolate to my coffee every morning. Mmmm... I can't vouch for any scientific findings about this, but I do know that it makes me happy--which in turn can lower my blood pressure.(Photo by timbec of stock.xchng)
