The Arabs were among the first coffee drinkers who added spices such as cinnamon to their brew. Through trial and error people figured out the compatibility of certain flavors and ingredients with the beans. Pumpkin Spice Coffee Sauce With Pecan Nut "Chips"

Try this delicious recipe
Ingredients
- One quarter (1/4) firmly packed dark brown sugar
- Five (5) tablespoons heavy cream (you can substitute with yogurt, suggest Greek Yogurt which has the consistency of heavy cream and is not "watery"
- One and a half (1 1/2) tablespoons Pumpkin Spice Flavored freshly ground coffee
- Two (2) tablespoons butter
Preparation:
Combine the sugar, cream, and coffee in a saucepan.
Bring to a boil and cook for 30 seconds to 1 minute as needed, mixing continuously.
Remove from heat when it is well mixed, turn off the heat, mix in the butter and set aside to cool.
How to use:
To add in shakes, desserts, frostings, toppings for that special taste. Add a few pecan nut "chips" for decoration purposes and that extra "crunchy" taste. This is a delicious touch anytime but especially during the Fall and Winter seasons. Enjoy!
English Caramel Coffee "Coconut Balls" or "Cocadas"
They keep well in tightly sealed containers or plastic zipper bags for 2 to 3 weeks.
INGREDIENTS:- About three (3) cups shredded coconut (lovely if "fresh" but you can find good quality shredded bagged coconut at gourmet stores)
- One (1) cup coconut water (again, lovely if "fresh" but you can find it canned or refrigerated at gourmet and specialty stores)
- Four (4) tablespoons freshly ground flavored English Caramel coffee
- One quart (1/4) cup water
Cooking with coffee is fun!
DIRECTIONS:
- Place the sugar and coconut water into a heavy saucepan over medium heat. Stir slowly until the sugar dissolves completely.
- Add the shredded coconut. Decrease the heat and cook, stirring constantly, for about 15 to 20 minutes. Yes, it's an effort but well worth it and necessary.
- Mix the English Caramel Coffee and water, add to the saucepan with the coconut mix and cook for an additional 5 to 10 minutes max. Continue to stir and watch the heat so it does not stick to the saucepan.
- Spray a baking sheet with nonstick spray or use non-stick foil if you prefer. Drop teaspoonful-sized scoops of the mixture onto the pan using a good, large and strong spoon (good idea to "oil" it so the coconut mix does not stick).
Remember: the mixture is hot so do not touch it with your fingers. Let it cool completely and enjoy! The "coconut balls or cocadas" are quite different from any you have tasted before: chewy, crunchy, tasty and aromatic.
