Make a light egg custard (AKA flan) for the middle of your next dessert shooter!
Dessert shooters are those cute little mini desserts you see served in restaurants today. Many claim to have been the first to feature dessert shooters on the menu; my first experience with these mini dessert delights was at the local Applebee's. From my very first spoonful, I was hooked! And, I was about to become the Dessert Shooter Queen (just check out some of my other dessert shooter lenses to the right under "Related Lenses" for verification). These little desserts are so easy to make and, when placed in small pretty glasses, they make a very beautiful presentation. Your dinner guests will love these small sweet offerings and will be amazed at your culinary skills.
Doris, one of my caregivers for my Mom, is teaching me some interesting recipes which are low in sodium and delicious. She made this delightful egg custard for my Mom - I think it would work great surrounded by some plump raspberries as the middle layer of a dessert shooter.

Since I cook a lot of individual dinners and desserts for my elderly Mom, I love these ramekins! I'll make a small chicken pot pie, take it out of the ramekin and freeze it. Much better than buying the frozen chicken pot pies which are filled with sodium.
Egg custard
AKA Flan
- Serves: 2
- Prep Time: 5 minutes
- Total Time: 20 minutes
This egg custard recipe will make a light dessert shooter center for two or three small mini desserts. If you're serving more guests, just increase the quantities.
If you're setting up a dessert shooter bar, why not bake the egg custard in one larger glass bowl? Let your guests just dip out as much as they want.
Ingredients
- 2 eggs
- 3/4 cup milk
- 1 T sugar
Instructions
I told you it was easy.
First off, get a saucepan which will hold both of the glasses you're going to cook your egg custard in. Put in one of the empty ramekins or pyrex bowls and add water to about 3/4" from the top of the bowl. Remove bowl and boil water.
While the water is boiling, lightly mix the eggs and sugar. If you like a fluffier custard, mix it until the eggs and sugar are pale yellow. Slowly add in the milk and mix to combine.
Here comes the tricky part:
Remove the boiling water from the flame for ease of preparation for this step. Place a folded paper towel in the water (this will keep the bowls from clattering as they you cook the flan.
Place the egg custard bowls in the water on top of the paper towel and slowly pour in the mixture.
Place the pan back over a low flame - it should just simmer from this point on. Place a top on the pan and simmer for 5 minutes.
After 5 minutes, turn off the flame and allow the pan to stay on the hot burner, covered, for another 10 minutes.
After 10 minutes, remove the cooked egg custard. If you want to prefer the top from thickening as it cools, cover with Saran Wrap. Refrigerate prior to serving.

Personalize your egg custard to your taste
The recipe I just gave you is for the most basic egg custard, but there's no reason to stop there! With a little imagination, you can turn a basic egg custard into the most delicious dessert shooter ever.
Here's some ideas to add into the mixture before you boil it:
1. A dash of cinnamon.
2. 1/4 t vanilla
3. 1/4 t flavored oils (see Amazon module below)
4. 1/2 t cocoa
5. A few small marshmallows
6. Chocolate chips
7. Lemon or lime zest
Some dessert shooter ideas to get you started
Use any (or all!) of the below ingredients as an accompanying ingredient in your egg custard dessert shooter.
- Shaved chocolate
- Blueberries, strawberries, and blackberries.
- Whipped cream makes a great topping to any dessert shooter
- Pound cake or sponge cake soaked in a liquor of your choice
- Lady fingers
- Brown sugar mixed with graham cracker crumbs and a bit of butter - press into the bottom of the dessert shooter glass.
- Crushed pineapple
- Candied fruit
- Ice cream toppings such as butterscotch or hot fudge
- Crushed cookies
- Vanilla wafers are delicious with egg custard and some banana
