Beef, Broccoli with Rice Recipe

Beef, Brocoli

1 tablespoon vegetable oil
1 pound boneless beef sirloin steak or beef top round steak, 3/4-inch thick, cut into thin strips
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
3 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon garlic powder
1/4 teaspoon crushed red pepper
3 cups fresh or frozen broccoli florets
4 cups hot cooked rice

Beef, Brocoli with Rice Directions

* Heat the oil in a 10-inch skillet over medium-high heat. Add the beef and stir-fry until well browned.
* Stir the soup, soy sauce, vinegar, garlic powder and pepper in the skillet and heat to a boil. Stir in the broccoli and cook until it's tender-crisp. Serve the beef mixture over the rice.

Stuffed Bell Pepper Recipe

Stuffed Bell Peppers

Stuffed Bell Peppers6 green peppers washed, topped and seeded
1 tbsp. shortening
1 1/2 - 2 lb. ground beef
1 cup cooked rice
1 small onion, chopped
1 tsp. salt
1/8 tsp. black pepper
Dash of basil
1/2 cup ketchup
1 8-oz. can tomato sauce

Suffed Bell Pepper Directions

Heat shortening in skillet and brown beef. Combine meat and next 6 ingredients. Stuff bell peppers. Arrange bell peppers in large crockpot. Can be stacked. Pour tomato sauce over peppers. Cook on low for 6-7 hours or on high for 3-4 hours.

Ready in 4 - 7 hours

    Now that harvest is in, green pepper recipes make good sense. I think I'll try yours with some fried zucchini.

    always good to have recipes as too many are sedentary and eat crap fast food. Changing ones diet and exercise can kick the diabetes problem for many. Here is a link that may be helpful for those with juvenile diabetes.
