Beef, Broccoli with Rice Recipe
Beef, Brocoli
1 tablespoon vegetable oil1 pound boneless beef sirloin steak or beef top round steak, 3/4-inch thick, cut into thin strips
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
3 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon garlic powder
1/4 teaspoon crushed red pepper
3 cups fresh or frozen broccoli florets
4 cups hot cooked rice
Beef, Brocoli with Rice Directions
* Heat the oil in a 10-inch skillet over medium-high heat. Add the beef and stir-fry until well browned.* Stir the soup, soy sauce, vinegar, garlic powder and pepper in the skillet and heat to a boil. Stir in the broccoli and cook until it's tender-crisp. Serve the beef mixture over the rice.
Stuffed Bell Pepper Recipe
Stuffed Bell Peppers
6 green peppers washed, topped and seeded1 tbsp. shortening
1 1/2 - 2 lb. ground beef
1 cup cooked rice
1 small onion, chopped
1 tsp. salt
1/8 tsp. black pepper
Dash of basil
1/2 cup ketchup
1 8-oz. can tomato sauce
Suffed Bell Pepper Directions
Heat shortening in skillet and brown beef. Combine meat and next 6 ingredients. Stuff bell peppers. Arrange bell peppers in large crockpot. Can be stacked. Pour tomato sauce over peppers. Cook on low for 6-7 hours or on high for 3-4 hours.

- Now that harvest is in, green pepper recipes make good sense. I think I'll try yours with some fried zucchini.

- always good to have recipes as too many are sedentary and eat crap fast food. Changing ones diet and exercise can kick the diabetes problem for many. Here is a link that may be helpful for those with juvenile diabetes.
