Steamed Brussels Sprouts and Carrots for Diabetics

Introduction

This quick and easy recipe is a great way to steam brussels sprouts and carrots for diabetics and anyone else that enjoys fresh, sweet tasting steamed vegetables. For a surprisingly satisfying dinner, try it!

INGREDIENTS: 4 carrots (small), 1 lb. brussels sprouts (small), 1 1/2 tbsp. white wine vinegar, 1 1/2 tbsp. maple syrup (sugar free), 2 tbsp. vegetable oil, 1/2 tsp. salt, 1/4 cup chopped walnuts, and black pepper.

STEP 1

Remove stems from carrots and brussels sprouts. Scrape and slice carrots.

STEP 2

Place the carrots and brussels sprouts into a steamer. Cover with lid and steam for 15 minutes until tender.

STEP 3

Mix white wine vinegar, maple syrup, vegetable oil, salt, and black pepper for the dressing.

STEP 4

When steaming is done, pour the carrots and brussels sprouts into a bowl. Add with the chopped walnuts and pour the dressing in. Mix well and serve.
