Buttercream Icing Recipe 

Thick and creamy buttercream recipe is perfect for decorating

For best results, keep the prepared icing refrigerated when you're not using it. This buttercream recipe can be refrigerated in an airtight container for up to 2 weeks. When you're ready to use it after keeping it refrigerated, whip again for a few minutes. Makes 3 cups. Thin the icing with light corn syrup for icing cake or use as prepared for decorating.

  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter or margarine, softened
  • 4 cups (1 lb.) sifted confectioners' sugar
  • 2 tablespoons milk
  • 1 teaspoon clear vanilla extract
Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy.

The Wilton Diego cake pan instructions use a lot of icing colors for detailed decorating that may be intimidating if you're not experienced at decorating cakes. Here's an easy idea for a Diego cake that you can do even if you've never decorated a cake before.

Take any cake and frost it with green frosting, and top it with a Diego cake topper, candle, or small toy figure (Your little Diego fan may already have some that would be appropriate. Raid the toy box, wash them, and you're good to go!) Add any other small plastic toys or figures that fit the theme: a baby jaguar, monkeys, snakes, little plastic trees. If you want to do more, add a strip of blue frosting to look like a river, and use green icing to add plants and grass to the green sections of frosting.
