Incredibly Simple Chicken

When I first heard of this recipe, I laughed... but I'm also a diehard Diet Coke fan... so I thought, what the heck, I'll try it!

Guess what - delicious beyond words! And when you see how easy it is you won't believe it.

Serve over mashed potatoes or rice.... mmmmmm!

OK here's the recipe

So simple you don't even need to write it down!

Five ingredients but it tastes like real oven baked chicken that's been simmering all day.. . tender, tasty and delicious.

  • 1 can tomato paste
  • 3 T brown sugar
  • 2 cans diet coke
  • 3/4 cup salsa
  • 4 boneless chicken breasts, about 3 to 4 ounces each


In a deep frying pan with lid, or large heavy pot, put all ingredients in and bring to a boil. (No browning necessary) Cover and simmer 30 to 45 minutes, stirring 4 or 5 times.


Are boneless chicken breasts nature's most nearly perfect food?

Well no, not really but you have to admit, they are terrific for a fast chicken dinner. Versatile, tasty and low cal.
Plain, skinless chicken is about 30 calories an ounce before cooking. An average size breast is roughly 4oz. ... so about 120 calories per half chicken breast without skin.

    This is an interesting recipe -- I had never heard of using diet coke with chicken -- I think I've heard of beer.
