In 1874 it was rumored that President Ulysses S. Grant would run for a third term. Thomas Nast cartoons in Harper's Weekly included an elephant, representing the Republican vote - not the party.
Later cartoonists of the day picked up the symbol, and the elephant soon ceased to be the vote and became the party itself.
Decades earlier, opponents of Andrew Jackson called him a 'jackass' for his populist policies. He was known for being stubborn.
Jackson co-opted the mascot, using it to his own and his campaign's advantage. Later Thomas Nast also used this symbol for the Democratic Party in a political cartoon as well.
