Dr. Joel Fuhrman is a board certified family physician. He is regarded as one of America's leading nutritional experts. His best selling books include: Eat To Live, Disease-Proof Your Child , Cholesterol Protection for Life , and Eat For Health amongst others.
Dr. Fuhrman has appeared in hundreds of magazines, radio, and television shows including: Good Morning America, The Today Show, Good Day New York, America's Talking, TV Food Network, CNN and the Discovery Channel.

Dr. Fuhrman's dietary approach may be summarized in five simple principles.
These include:

1. No refined or processed foods.
2. No animal foods.
3. No vegetable oils.
4. Exercise.
5. Eat plenty of vegetables, fruit, beans and legumes, nuts and seeds.

While strict adherence to these rules will help achieve optimal health, Dr. Fuhrman realizes that for many people this is a process. He therefore respects each person's need to progress at their own pace.

Eat to Live - Rule # 1 

No Refined or Processed Foods

Cakes, cookies, crackers, white bread, and pasta are amongst the many foods that offer us little, if any, nutritional value. These foods have been processed and refined, stripped of their fiber, and are commonly classified as empty calories or "junk food."

Unfortunately, approximately 50% of our caloric intake comes from these high calorie, low nutrient foods. This is one of the main reasons obesity is on the rise and presents one of the major causes of illness today.

What's even more disheartening, is that about 90% of our food budget is allocated
to acquiring these refined, processed foods.

Eat to Live - Rule # 2 

No Animal Foods

Over 40% of our caloric intake comes from animal foods. This incudes meat, fish, poultry, eggs and dairy products. Numerous studies have shown that as populations consume more animal products, the incidence of heart disease and cancer rise in direct proportion.

Two of the most dangerous foods that cause the greatest harm are cheese and butter. They are rich in saturated fat, clog our arteries, lead to atherosclerosis, and are a major cause of heart disease, stroke, and cancer.

Eat to Live - Rule # 4 

Exercise

My favorite form of exercise is walking. I try to walk about 30 minutes every morning. All forms of exercise are great. Swimming, biking, gardening, jogging will all help strengthen your cardiovascular system and improve your overall well being.

The key to success is commitment and consistency.

If you have trouble getting started, find a friend and workout together.

Eat to Live - Rule # 5 

Eat A Plant Based Diet of Unrefined Natual Foods

The foods healthiest for us are those which are low in calories and rich in vitamins, minerals, and phytochemicals.

The best source for these "micronutrients" are vegetables, fruits, beans and legumes, nuts and seeds.

Dr. Joel Fuhrman emphasizes the importance of having a big salad of green vegetables once or twice a day. He encourages his patients to put up a sign on their refridgerator door that says: Salad is the main dish.

Nutritional Supplements 

For Added Insurance

Dr. Joel Fuhrman is not keen on vitamin therapy. He believes that ideally we should be obtaining our nourishment from whole, natural foods. Nevertheless, there are times when we may require a vitamin supplement.

The term "supplement" is quite appropriate as it's purpose is not to substitute for the foods we should be eating, but rather to simply supplement what our body may be lacking.
