This book offers an incredibly well-researched (with bibliography!) approach to cocktail history and mixology. I return to this one again and again.
The Official Harvard Student Agencies Bartending Course, 3rd Edition
This was my introduction to bartending. It was my bible before I even had a barback gig. It's approachable and realistic, and one of the better guides to the profession of bartending I've come across.
Michael Jackson's Beer Companion: The World's Great Beer Styles, Gastronomy, and Traditions
A great introduction to the variety of beer styles available throughout the world. Comprehensive in his coverage of history and production, Jackson is one of the leading experts on beer.
Oldman's Guide to Outsmarting Wine: 108 Ingenious Shortcuts to Navigate the World of Wine with Confidence and Style
If you hate the idea of learning about wine but really, really want to be able to comfortably order from a restaurant wine list or choose from the vast selection now available to your grocery store, pick this up. It's one giant cheat sheet to wine.

Micky Rourke's infamous portrayal of infamous writer and drunk Charles Bukowski is perfect, but it's Faye Dunaway who makes this movie a true miracle. Fuck Leaving Las Vegas-Barfly is the epitome of the dark side of drinking.
