Amazing Italian Easter Cookies Recipe
Say Happy Easter with a basket of Easter cookies. Baskets aren't only for eggs and chocolates on this special holiday, but for cookies as well.

Italian Easter Cookie Recipe

- Serves: Lots
- Prep Time: 20 Minutes
- Total Time: 45 Minutes
Ingredients
- Cookie Dough Ingredients
- 1/2 cup butter
- 3/4 cup white sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/4 cup milk
- 1/4 cup vegetable oil
- 3 3/4 cups all-purpose flour
- 5 teaspoons baking powder
- Cookie Icing Ingredients
- 4 cups confectioners' sugar
- 1/2 cup butter
- softened
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3 tablespoons milk
- Colorful sprinkles (optional)
Instructions
Here's what you need to do:
1. First you should preheat oven to 350 degrees Fahrenheit or 175 degrees Celsius. Afterwards grease cookie sheets with butter or butter spray.
2. Cream together 1/2 cup butter and white sugar until light and fluffy in a large bowl. Beat in the eggs one at a time. Next you want to stir in 1 teaspoon vanilla, 1 teaspoon almond extract, 1/4 cup milk and oil in to the mixture. Combine the flour and baking powder and stir into the wet mixture. Once you've thoroughly mixed all of the ingredients, roll the dough into 1 inch balls. On a lightly floured surface, roll the balls out into ropes about 5 inches long. Tie into loose knots and place cookies 1 inch apart onto the prepared cookie sheets.
3. Bake for 5 minutes on the bottom shelf and then 5 minutes on the top shelf of the preheated oven, until the bottoms of the cookies are golden brown.
4. While the cookies are baking, you then can proceed to making the icing. First cream together the confectioners' sugar, 1/2 cup butter, and 1 teaspoon vanilla and 1 teaspoon almond extracts. Beat in 3 tablespoons milk, one tablespoon at a time.
5. When the cookies are done and have cooled down, dip them into the icing. You can also sprinkle the tops of the cookie with as much or as little sprinkles you'd like.
Now if these cookies last as long as your chocolates and candies, then that'll be a miracle because they are just too good. What better way to spread the Easter spirit than by sharing a freshly baked batch of Easter cookies.

- Your Easter cookie has a special look to it, it looks like it's from an old family recipe and would only be made on a certain special occasion such as Easter. I liked it.
