Making and giving sweet homemade Easter biscuits ( or cookies ) is a very old tradition in England. These simple homemade Easter cookies were baked as a gift to mark the end of Lent, and the celebration of new hope at Easter. In the Christian tradition, Easter comes at the end of Lent. Lent is traditionally a time of denial, when many people give up sweets, chocolates, cookies, biscuits and cake.
The traditional simple Easter biscuit was made and given as a gift to mark the end of Lent, and the joy of Easter. These simple cookies are so delicious you might want to make them all year round.
I'll give you the Easter cookie recipe, tell you how to make your homemade Easter cookies into a pretty gift, and look at Easter cookies around the world.

Recipe for traditional Easter Biscuits or Easter Cookies.
A simple, easy to make Easter biscuit, Easter cookie recipe.
Traditional Easter biscuits- a simple Easter recipe dating back hundreds of years.As you can see, the traditional Easter biscuits recipe gives you a delicious , but plain looking Easter cookie. To give as a gift, tie them up in a twist of clear film and tie with a pretty ribbon.
If you are on a gluten free diet this recipe would work well with rice flour.
This makes 10-15 biscuits I have put US figures in brackets- I hope the conversions work for you. Here is a useful conversion chart for all recipes.
100g butter (1 stick)
80g caster sugar (heaped 1/4 cup, superfine sugar)
1 egg yolk
150g plain flour ( 1 1/3 cup all purpose flour)
½ tsp baking powder
1tsp mixed spice
100g currants (2/3 cup)
1 extra tbsp caster sugar for topping
METHOD
To make the biscuits, heat the oven to 170C/Gas 3.( Very Moderate oven) With an electric mixer, beat the butter and sugar until pale and fluffy. Beat in the egg yolk. Sift together the flour, baking powder and mixed spice.
Add the flour mixture to the butter mixture, mixing well with a knife. Mix in the currants, pulling the dough together and kneading briefly until smooth. Warm hands are good for this, as you want to butter to soften. ( unlike pastry where you need cold hands)
Roll out finely on a lightly floured worktop Cut into 6cm or 8cm rounds with a plain or fluted biscuit-cutter.
You could use special Easter shaped cutters, such as a bunny cutter, but the tradtional Easter Biscuit is round.
Place on a baking tray lined with greaseproof paper, and sprinkle with sugar. Bake for 12 to 15 min until just cooked, but not browned.
Carefully transfer to a wire rack - the biscuits should still be a little soft but will become crisp as they cool.
Store in an airtight container for up to 2 weeks.
You can parcel 6 or so together, wrap in film and tie with a ribbon for a pretty Easter gift.
