My mini spinach quiches are the ideal appetizer for any situation. Are you thinking "Superbowl" or "Derby" party? You can fix them for a New Year's Brunch or as something to knosh on before the turkey comes out of the oven on Thanksgiving Day. They freeze beautifully and that means they can be baked ahead of time. Once they are thawed (or not) I just pop them in a cold oven on a cookie sheet and by the time the oven reaches 350 degrees, they are ready to eat. But this is just in my oven, so keep an eye on them for your own good.


OK, I advise that you avoid mentioning the spinach to your "knoshers"!  Lots of people think they do not like that green veggie so they won't even try the mini quiches. Believe me, I have converted lots of spinach haters into spinach quiche lovers with this recipe that I have become famous for in my neck of the woods.

Mini Spinach Quiche Appetizers ~ makes 15 mini quiches (and one 8" quiche)

Preheat oven to 350 degrees; bake appetizers 10-15 minutes

If you have:

10 oz. box of frozen chopped spinach -thawed and sqeezed dry
2 Tablespoons flour
8 oz. (2 cups) pre-shredded cheddar or colby cheese
3 to 6 slices of cooked bacon, crumbled or bacon bits
1 egg, beaten
milk or half&half to add to egg making a total of 1 cup liquid
1 teaspoon of mustard (Dijon or yellow)
Mini Filo (or Phillo) Shells

Then you can:

Toss the shredded cheese with the flour in a mixing bowl.
Add the squeezed spinach and crumbled bacon and mix gently.

Then you:

Beat the egg in a measuring cup. Add enough milk (fat free works fine!) to fill cup to the 8 oz. line. Put in the mustard and gently mix.

Pour the egg/milk mixture into the cheese/spinach bowl and gently stir.

Gently fill the filo cups.

Put the filo shells on a cookie sheet or in miniature muffin tins.

Bake in the preheated 350 degree oven until a toothpick inserted into the center of a mini quiche comes out clean, 10 to 12 minutes.

I had only 15 filo cups so I added more cheese and egg/milk mixture and made a full sized quiche, too!

    Great and easy "in a hurry" recipe for quiche. Using the pre-made phillo shells and frozen spinach can be a real time saver. I have some frozen baby spinach in the freezer from my last spring container gardens. This sounds like a good idea (the whole quiche) for dinner tonight!
