    Spinach is awesome and I'm on a "quiche fest" of sorts. Since I only cook for two people, a big quiche is often too much. Enter mini-quiches. Thanks for the recipe!

    Great and easy "in a hurry" recipe for quiche. Using the pre-made phillo shells and frozen spinach can be a real time saver. I have some frozen baby spinach in the freezer from my last spring container gardens. This sounds like a good idea (the whole quiche) for dinner tonight!

    Maybe not if I knew the spinach was frozen (Sorry!), but definitely if I knew it was fresh. I'm a big fan of real fresh baby spinach and love how it cooks up in a quiche. So good!

    I just pulled these out of the oven for tomorrow morning's Christmas brunch. I tasted a couple, they are yummy and were easy to assemble. Your filling as is makes three boxes of the Fillo cups. I'm not big on the eggy taste of quiche and these didn't have that at all. Thank you for posting the recipe!
