Fresh Garlic And Sage With Fish
Easy Baked Salmon Recipes
- Serves: 4 - 6
This recipe will work well for any fish such as salmon, trout, or halibut. The rich flavor of the fresh garlic and sage mixed together permeates the fish and produces a wonderful sauce. The use of selected spices and real churned butter gives the fish a melt in your mouth taste that will work well with any type of accompaniment you choose to add such as wild or brown rice and you have complete meal.
If you are camping or on vacation and have freshly caught fish, this is a great way to prepare them. If the fish is one that needs scaling, do so after cleaning so no scales find their way into the sauce. Salmon fillets turn flaky and full of flavor when the olive oil, freshly minced garlic and tiny bits of sage are added. Some cooks decide not to use the sage that is a matter for individual preference.
Fish is one of those wonderful foods that are very helpful in controlling the amount of bad cholesterol in the body. Halibut and trout are both lighter fish in color so they look well when placed near the darker wild rice. The rich pink or red of the salmon is ideal for serving with wild rice. Minute rice will also work with this recipe, but the preparation times need to be changed for it because the long grain or wild rice takes longer to cook then the five-minute type. The sauce of butter and herbs mixes well with both types of rice so there is little more to add then a good appetite and plenty of helpings.
Baked Fish With Fresh Sage And Garlic Butter Sauce
Ingredients
- 2 pounds fish salmon fillet
- 5 to 6 fresh sage leaves
- 4 small garlic cloves
- 4 teaspoons stick butter (no margarine)
- 2 or 3 teaspoons olive oil
- 1 Cup crushed breadcrumbs or croutons
- Salt or pepper to taste
Instructions
Mince two of the garlic cloves very fine and combine in a small bowl with four teaspoons softened butter. Wash and cut the sage leaves very fine and add to garlic butter mixture. You may have to use more of the butter with the sage. Let this mixture sit while you finish preparing the fish steaks to cook.
Preheat oven to 425 degrees Fahrenheit. While the oven is heating, rinse the fish under cold water and lightly coat with olive oil, adding salt and pepper to each side. Place the fish skin side down in shallow baking dish. Make certain the olive oil lightly covers the pan so that the fish does not stick while it is baking.
In a separate small bowl, add the breadcrumbs and the rest of the pressed garlic cloves.
Combine well, and then add the melted butter mixture with bits of sage. Place the breading on top of the fish and cook, allowing for ten to twelve minutes per inch of fish thickness. Check to see if the fish is done, then brown for about one minute under the broiler. Place the fish on a serving platter after removing the skin. Serve with a light sauce or fresh lemons slices, if desired.

Although baked salmon recipes are easier than some other oven baked fish recipes, it still pays to learn how to bake salmon like a pro. The reason these recipes are easier than lean fish recipes is that salmon is rich in omega-3 fats.
Not only are these nutritious but they help to keep the fish moist while it cooks. If you have ever accidentally overcooked a piece of fish, you will know how awful dried-out fish can be. This does not mean you can forget about the salmon in the oven because it will stay succulent, but it does mean you have a bit of leeway with the cooking.
Salmon is naturally more moist than other fish so the results of easy baked salmon recipes are usually very good, even if you are a beginner to baked fish recipes and manage to give the fish an extra minute or two in the oven.
Adding Flavor to Your Salmon
Lean fish usually needs to be cooked in a sauce, marinated or cooked in a covered container or wrapped in foil but because salmon is naturally juicy, you can get away with baking it as it is.
It is still a good idea to drizzle some lemon juice and olive oil over it (or another liquid if you like - white wine is also good) just to flavor it and keep it extra-juicy. You can add fresh herbs to salmon before baking it too. Parsley is nice with all fish and dill works well with salmon in easy baked salmon recipes.
