An Explosion in My Kitchen

Crash! "Oh! Now I know why they said not to use a glass pan!", I exclaimed, after I jumped back to avoid flying glass.

After my husband lost his job, we looked for ways to save money. Eating out was one of our big money wasters, so one solution to our new financial status was to spend more time at home, and less time out spending money.

I've never successfully baked bread. I was always intimidated by kneading dough. I never understood the proper way to knead or how to know when the dough was "elastic" or any other descriptive terms people used to indicate when dough was sufficiently kneaded. But let's face it; flour is cheap. I can buy a 50-pound bag of flour for around $12 at Costco, and can get a large bag of yeast for around $5. I haven't calculated how much a single loaf of bread costs, but it is definitely mere pennies per loaf.

The best part about it is that my entire family loves bread. There is nothing like the smell of baking bread, and a piping hot loaf of bread, served with even a simple bowl of soup, makes a satisfying meal.

In spite of my rocky start with bread baking that caused a pan to explode, I've become a proficient bread baker and now bake at least two or three loaves of bread each week, with minimal time and effort.

Baking bread using the methods found in Artisan Bread in Five Minutes a Day is truly simple. When I say that anyone can do it, I mean that anyone can do it. BUT, this doesn't mean that it's not important to follow instructions.

For example, let's consider the cause of the explosion in my kitchen. The instructions in the cookbook told me not to use a glass plan. (More on what the pan is needed for in a minute.) I had a glass loaf pan that I've baked in before many times, so I ignored the warning not to use a glass pan. Let me just say that you may choose to do things your own way, but you do so at your own peril. Thankfully, my insistence to do things my own way didn't result in injury, but it could have, so learn from my mistakes and follow the instructions, okay? (You'll be glad you did!)

Basic Tools for Bread Baking

The good news is, you need only a few basic tools to make delicious bread at home.

Here are the basics:

  • Bucket or bowl with a lid
  • Dough stirrer
  • Pizza peel
  • Pizza stone
  • Ovenproof pan (not glass!)
  • Measuring cups and spoons

    As I mentioned earlier, you want to make sure not to use a glass pan, because when you pour water into the heated pan, it will shatter. In case you're wondering, pouring glass into the pan creates steam in the oven, which is what causes the wonderful hard crust on the bread.

    How to Successfully Bake Bread at Home

    If you watched the video, you'll already understand the basics of the Artisan Bread in Five Minutes a Day method. If you didn't watch the video, or even if you did and just prefer written instructions, here's an overview of how it works:

  • Add salt and yeast to room temperature water and stir
  • Stir in flour
  • Loosely cover the bowl and allow to sit in a warm place, for about two hours
  • Place the bowl in the fridge for up to two weeks
  • Anytime you want fresh baked bread, pull off a hunk of dough, shape it into a round loaf, allow it to rise, and bake it.

    It was only two months ago that I shattered the glass pan in my oven when I attempted to make my first loaf of bread. Since then, I've successfully made more loaves of fresh baked bread than I can count, all without incident. I can whip up a batch of dough in only a few minutes, and anytime I want fresh bread, I simply pull out a blob of dough, let it rise, and bake it.

    Considering that just a couple of months ago I had never made a loaf of bread before and now I can almost do it in my sleep, I can guarantee that this is something you'll be able to do also.

    I truly think that no-knead bread is the way to go, but there are some advantages to bread machines as well. If you spend a lot of time outside the home and want to be able to schedule when bread will finish baking, you might want to give a bread machine a try.

      This is a great lens. I love baking bread, as well as sweet breads such as banana nut bread. Most yeast recipes can be used to make a wonderful pizza crust, too. Just press it out into the oiled pizza pan with your hands and add your favorite toppings. Thumbs up!
