What is chicken salad - from Wikipedia
Chicken salad is any salad that comprises chicken as a main ingredient. In Europe and Asia this may be complemented by any number of dressings, or indeed no dressing at all and the salad consituant can vary from traditional leaves and vegetables, pastas, cous cous to noodles or rice.
In the US it refers to a salad consisting primarily of chopped chicken meat and a fat-based binder such as blended chicken fat, lard, mayonnaise or salad dressing. Like tuna salad, it is served as a creamy spread, and it is often used for sandwiches. Typically it is made with leftover or canned chicken in the United States.
Chicken Salad is thought to have been first served by Town Meats in Wakefield, Rhode Island in 1863. The original owner, Liam Gray, mixed his leftover chicken with mayonnaise, tarragon, and grapes. Oriental Dressing
* 3 tablespoons honey
* 1 1/2 tablespoons rice wine vinegar
* 1/4 cup mayonnaise
* 1 teaspoon Grey Poupon Dijon Mustard
* 1/8 teaspoon sesame oil
Salad
* 1 egg
* 1/2 cup milk
* 1/2 cup flour
* 1/2 cup cornflake crumbs
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 1 skinless chicken breast half
* 2 cups vegetable oil (for frying)
* 3 cups chopped romaine lettuce
* 1 cup red cabbage
* 1 cup napa cabbage
* 1/2 carrot, julienned or shredded
* 1 green onion, chopped
* 1 tablespoon sliced almonds
* 1/3 cup chow mein noodles
Directions
Preheat oil in deep fryer or deep pan over medium heat.
You want the temperature of the oil to be around 350 degrees.
Blend together all ingredients for dressing in a small bowl with an electric mixer.
Put dressing in refrigerator to chill while you prepare the salad.
In a small, shallow bowl beat egg, add milk, and mix well.
In another bowl, combine flour with corn flake crumbs, salt and pepper.
Cut chicken breast into 4 or 5 long strips.
Dip each strip of chicken first into egg mixture then into the flour mixture, coating each piece completely.
Fry each chicken finger for 5 minutes or until coating has darkened to brown.
Prepare salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots.
Sprinkle sliced green onion on top of the lettuce.
Sprinkle almonds over the salad, then the chow mein noodles.
Cut the chicken into small bite-size chunks.
Place the chicken onto the salad forming a pile in the middle.
Serve with salad dressing drizzled over it or on the side.

TOP RAMEN CHICKEN SALAD
2 pkgs. Top Ramen chicken flavored noodles
3 chicken breasts, cooked
1/2 head shredded cabbage
3 tbsp. toasted sesame seeds
3 tbsp. toasted sliced almonds
3 tbsp. sugar
3 tbsp. lemon juice
6 tbsp. oil
1 tsp. Accent
1 tsp. salt
1 tsp. pepper
1/2 c. each red, green, yellow sweet peppers
1 sm. can sliced water chestnuts, drain
1/2 c. chopped green onions, tops too
Remove soup packets and set aside. Crunch up dry noodles and place in large bowl. Add cabbage, peppers, onions, water chestnuts and chicken (chopped). Mix in another small bowl sugar, lemon juice, oil, accent, salt and pepper and contents of the two small soup packets. Mix well. Add sesame seeds and pour dressing over all. Mix thoroughly and cover.
Let it set for 24 to 36 hours before serving, tossing it several times. Scatter toasted almonds on top before serving. Do not cook noodles. You can vary this salad by using shrimp flavored soup and putting in baby shrimp, or omit meat and serve vegetarian. Serves: 10 to 12.

Almond Grape Chicken Salad
2 lb boneless skinless chicken breasts; cooked
1 c mayonnaise or salad dressing
1/2 c sour cream
1 c green grapes; halved
1 1/4 c toasted almonds
White pepper

Cut cooked chicken breast meat into 1/2 inch cubes and set aside. Blend mayo and sour cream in a bowl. Season with salt and pepper as needed.
Add cubed chicken meat, grapes and almonds and mix lightly, coating chicken. Stir gently until blended. Refrigerate 1 hour. Can serve with lettuce instead of bread. If the salad is too dry, add more mayonnaise.

Martha's Chinese Chicken Salad Recipe
Ingredients
1/2 lb. white chicken meat, cooked and shredded
1/4 cup soy sauce (use wheat-free soy sauce for gluten-free version)
1 teaspoon sherry
1 Tablespoon sugar
High smoke point cooking oil, such as grapeseed oil, corn oil, or peanut oil
2 oz. bean threads (one bunch)
4 green onions, shredded lengthwise
1 small head of lettuce (romaine works), shredded
2 Tablespoons chopped toasted almonds
2 Tablespoons toasted sesame seeds
Sauce:
2 Tbsp sugar
1 teaspoon salt
1/2 teaspoon ground pepper
3 Tbsp oil
1 Tbsp dark sesame oil
3 Tbsp vinegar
Method
1 Using two forks, shred the cooked chicken (if you don't have any already cooked, poach chicken pieces in simmering water until no longer pink inside). Mix soy sauce, sherry and sugar in a bowl and add the chicken. Let soak for 10 minutes. Remove chicken and pat dry with paper towels. Fry the shredded chicken in a little cooking oil on medium high heat to make it a little crispy and to bake in the seasoning. Set aside.
2 Put 3/4 inch of high smoke point cooking oil (such as grapeseed oil, or peanut oil) into a small saucepan. Heat on high heat until when you flick a drop or two of water into the oil it sizzles. Take one bunch of the dried bean threads and gently break them up a bit. Test the oil by putting one bean thread into the oil. If the oil is hot enough, the bean thread will almost immediately sizzle and puff up. That's when you know the oil is hot enough. Working with a few bean threads at a time, put them in the hot oil. As soon as they puff up, remove them carefully with tongs and place them on a paper towel to cool. The paper towel helps remove any excess oil. Set aside.
3 Cut your green onions, shredding them lengthwise as shown. Toast your chopped almonds, or chop your toasted almonds; toast your sesame seeds. (Heat a thin skillet to medium high heat, add the seeds - or nuts, don't do them both together - stir frequently until they begin to brown, remove from heat, they will continue to cook. Let cool to room temp.)
4 Mix all of the sauce ingredients together, in the order listed. Just before serving the salad, mix all of the salad ingredients together - lettuce, chicken, bean threads, almonds, sesame seeds, and sauce.

* SESAME DRESSING:
* 1/2 C. corn syrup

* 4 chicken breast fillets
* 1 large head iceberg lettuce, chopped
* 4 C. red leaf lettuce, chopped
* 1 1/3 C. canned mandarin orange wedges
* 1 C. rice noodles
* 1C. roasted sliced almonds
Preparation:
Prepare dressing by combining all dressing ingredients except vegetable oil and sesame seeds in a blender on high speed. Slowly add oil to mixture (to create an emulsion). Add sesame seeds and blend for just a couple seconds. Pour dressing into a covered container (such as a dressing cruet) and chill until needed.
Rub each chicken breast fillet with oil, then lightly salt and pepper each piece. Grill on medium/high heat until done. Chill chicken breasts in refrigerator until cold.
When chicken is cold, build each salad by first arranging about 4 cups of iceberg lettuce in the bottom of a large salad bowl or on a plate. Next, arrange a cup of red leaf lettuce on the iceberg lettuce.
Dice each chicken breast into bite-size pieces and sprinkle the pieces from each one over each salad. Arrange about 1/3 cup of mandarin orange wedges on each salad. Next, sprinkle about 1/4 cup of rice noodles and 1/4 cup of roasted sliced almonds on top of each salad. Add desired amount of sesame dressing and serve.

* 8 slices bread
* 2 hard-cooked, chopped eggs
* 1/2 c. mayonnaise
* 1 tbsp. lemon juice
* 1/2 c. chopped celery
* 1 1/2 c. finely chopped leftover turkey
* 1/2 c. sliced green onion
* 2 tsp. prepared mustard
* 2 tbsp. sweet pickle relish
Step1
Combine turkey, celery, green onions, lemon juice and pepper in a mixing bowl.
