Delicious and Easy to Prepare Diabetic Recipes
There are plenty of diabetic recipes that tantalize the taste buds yet still help manage diabetic health.

Crab Quiche
IngredientsNonstick cooking spray
3 tablespoons diet margarine
1 medium carrot, washed, trimmed, peeled, grated
1/2 medium onion, peeled, diced fine
1 medium zucchini, washed, trimmed, thinly sliced
1/2 medium red sweet pepper, washed, cored, diced fine
1/2 cup chopped parsley
8 ounces fresh, frozen or canned (and drained) cooked crabmeat
3/4 cup crushed saltine crackers
1 teaspoon baking powder
1/2 teaspoon ground white pepper
1 cup refrigerated or frozen egg product
1 1/2 cups fat-free milk
Directions
1. Preheat oven to 375 degrees F.
2. Spray large nonstick skillet with cooking spray. Add 1 tablespoon diet margarine and melt over medium heat. Add carrot, onion, zucchini, red pepper and parsley and saute until vegetables are just tender, about 5-6 minutes. Stir in crabmeat. Transfer mixture to 9-inch pie plate that has been liberally coated with nonstick cooking spray.
3. In medium bowl, mix crackers with baking powder and pepper; stir to blend. Using pastry cutter or two knives, cut in remaining 2 tablespoons diet margarine. Add egg substitute and milk and mix well. Pour mixture over crab mixture in pie plate.
4. Bake quiche until golden and puffed, about 35 minutes. Let stand for 5 minutes before serving.
Serves 6

Asian Chicken Salad
Ingredients1 Tablespoon Sesame Oil
4 Tablespoons Light Soy Sauce
4 Tablespoons reserved pineapple juice
2 Tablespoons lime or lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground ginger
1/4 teaspoon salt (omit if you are using regular soy sauce instead of light)
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper(optional)
4 skinless, boneless chicken breast halves
6 cups of mixed greens, can be prepackaged or a mix of your own favorites, cleaned and torn.
1 small can pineapple tidbits, drained, reserving the juice
1 small can of mandarin oranges, drained
8 mushrooms, cleaned and sliced
1 carrot, peeled and julienned
1 small red or yellow sweet pepper
Directions
Marinade: Combine first ten ingredients in a zip-lock bag and mix well (if it seems a little too thick you can add a bit of warm water to loosen it up a bit). Add chicken to marinade. Let marinate for at least 2 hours in the refrigerator, being sure to place the bag in a bowl to prevent drips or leaks from contaminating any other food in the refrigerator.
Cook chicken in a grill pan or on an indoor grill, until done (170 degrees), turning once (depending on the thickness of the breasts it can be anywhere from 10 to 15 minutes); put aside on a plate to rest while you prepare the salad base.
Place greens on salad plates. Top with pineapple, oranges, mushrooms, carrot and sweet pepper. Slice the chicken on the diagonal to form a nice presentation and lay upon the salad base.
Serve immediately with your favorite dressing or a light vinaigrette of sesame oil, pineapple juice and a dash of soy sauce.

Honey-Mustard Pork Chops
Ingredients1/2 cup Dijon mustard
2 Tbsp honey
1/2 ts salt
1/2 tsp ground black pepper
4 ea 5-ounce bone-in, center-cut pork chops
1 ea cooking spray
Directions
1. Preheat oven to 400 degrees. In a small bowl, combine Dijon mustard, honey, salt, and pepper.
2. Place pork chops in a baking dish coated with cooking spray. Pour mustard mixture over pork chops and spread to coat.
3. Bake pork chops in oven 30 minutes or until done.
Serves 4

Diabetic sweetener
Apple sauce - 1 cup
Stick margarine - 1
All-bran - 1 cup
All spice - ½ tablespoon
Egg - 1
Nutmeg - ½ tablespoon
Cinnamon - 1 tablespoon
Soda - 1 tablespoon
Flour - 1 ¾ cup
- Preparation method:
Mix all the above mentioned ingredients and drop the paste on a cookie sheet with the help of a spoon. Now bake it for about ten minutes at 350 degrees. Enjoy.
Fruit Delight
- Ingredients required:
Freshly sliced strawberries - 1cup
Canned pineapple chopped banana - 1
Sugarless orange soda - 360 ml
- Preparation method:
Mix all the contents in a bowl. Now distribute the contents evenly in 160 ml paper cups. Pour 60 ml of soda to each cup and refrigerate. Thereafter, allow it to stay at the room temperature for a few minutes. Now enjoy the concoction with a spoon.
Pasta
- Ingredients required:
Fat-free mayonnaise - ½ cup
Low-sodium soy sauce - 3 tablespoon
Sherry - 2 tablespoon
Pepper - ¼ tablespoon
Cooked spiral pasta (drained) - 1 cup
Cooked boneless skinless
Chicken breasts (cut in to bite Sized pieces) - 2 cups
Fresh snow peas - 2 cups (Strings removed and blanched
Sliced green onions) - 2
Sliced water chestnuts - ¼ cup
Toasted almonds - ¼ cup
- Preparation method:
Mix the mayonnaise with soy sauce, ground ginger, sherry and pepper in a small bowl. Set aside. Take a separate bowl and mix in pasta chicken, green onions, snow peas and water chestnuts, Add dressing mix and toss. Refrigerate the preparation overnight and sprinkle with almonds before serving.
Spaghetti
- Ingredients required:
Tomato juice - 12 ounce
Canned mushrooms - 1 large can
Salt - To taste
Garlic - To taste
Oregano - To taste
Onion flakes (dehydrated)
Green pepper diced - 1
Bean sprouts - 2 cans.
- Preparation method:
Cook all the above mentioned ingredients in a covered sauce pan. Let the sauce thickens. Now, add bean sprouts and let the mixture simmer for about ten minutes. Serve over cooked pasta noodles.

A Healthy Diabetic Diet

Diabetes is one of the fastest growing diseases in the modern western world and this is mainly due to the diet of the modern day person. The likes of fast foods and the microwave meals or out of the tin or freezer meals are the biggest culprits.
When you have just been diagnosed with diabetes this is the ideal time to assess your lifestyle and to sit down and plan a healthy diabetic diet. By paying attention to your diet this will not only control your diabetes but could also rule out the need to take insulin.
Healthy eating has a threefold affect on you: it controls blood glucose levels, lowers blood lipids (cholesterol) and achieve or maintain a healthy weight. A healthy eating plan for the person with diabetes really should be no different to a normal eating plan that we all should be following. However it is now much more important that the diabetic follows the healthy eating plan.
To achieve a healthy balance it is important that we understand more about the food we are eating and what is good and what is bad. The three main nutrients for our bodies are carbohydrates, protein and fat. A healthy diet will incorporate all three of these, although we require some more than others. It needs to be understood that people with diabetes have a difficult time breaking down carbohydrates in their system.
Carbohydrates once consumed become glucose that fuels our body, the best carbohydrate foods for a diabetic are those rich in fiber, such as wholegrain bread, rice and pasta. Also high fiber cereals, lots of legumes, fruit and of course lots of leafy green vegetables. Sugars should be eliminated as much as possible and any foods that contain white flour and/or sugar.
It must be noted that one diabetic plan will not suit and work all diabetics. Each diabetic must test and measure to ascertain what works best for them to manage their blood glucose levels. This does not always mean having to give up your favourite food, just moderate the quantity and how often you eat it.
So it is best that the entire eating plan is reviewed and it is best to do this in consultation with a nutritionist who specializes in diabetes.
By following a healthy diabetic diet and taking any prescribed medication you can live a full and normal life span.
