My husband and I can't afford to feed a lot of people, but when it's time for our kids birthday parties we do what we can to stretch the budget, keep the meals healthy and keep everyone happy. Food is a great way to keep guest at a party happy, but if you know me, Ecolicious, you know I wont serve hotdogs. Instead I make fresh salads. One of my favorite salads to make is Tuna salad. I make a big bowl of it. I use half of it to make sandwiches. I use the other half as dip and provide crackers on the side. It never lasts.

My Tuna Salad Recipe

Tuna Salad With the Fresh From the Garden Works

What you will need:
1 large bowl
Can opener
Several cans of tuna albacore [from the US or Canada]. (How many depends on the size of your party and other foods you will serve. Normally half or a third of a can per person will do). Fresh tuna can also be used.
A few cans of canned salmon [wild from Alaska] (Bet you didn't know that was coming.) Fresh salmon can also be used.
1-2 Fresh tomato
2-3 carrots
1-2 cucumbers
1 celery stick
1-2 green onions
A few leaves of fresh cilantro chopped
1 Pressed garlic sliver
1 Lime
A few tsb of mayo to lightly moisten the salad mixture
1 tsb of spicy mustered
Salt (to taste, about a dash)
Pepper (to taste, about dash)

Directions:
Open all the cans of tuna and salmon. If the salmon or tuna still have bone, take out the bone first.
Add all the tuna to the bowl.
Dice all the vegetables and add them to the tuna.
Cut the lime in half and squeeze it over the veggies and tuna.
Add the cilantro ad the garlic
Add the mayo and the mustard.
Mix all well in the bowl.
Then season to taste with the salt and pepper.
Mix the salad well again.
Taste.
If it taste perfect it is ready to serve. If it isn't add what you think it needs.

The tuna can then be spread onto slices of bread to make tasty sandwiches or it can be served with crackers.

Most of these ingredients are optional (you do need the tuna). Experiment with the fresh veggies and add the amounts or change to other vegetables. You can do the same with the herbs, the spices and the condiments.

The tuna I use in the salad doesn't have to be canned. Fresh tuna will taste just as good or better, but it may not be as affordable.

In Oil or Water?????

Personally I can't stand tuna in oil. It smells bad. Its messy. It changes the flavor of the tuna. So, I only buy canned tuna in water, but the choice is yours.

Other Green Tips For an Eco-friendly Tuna Salad

1. Recycle the cans
2. Add fresh veggies, fruits or herbs that are from your garden, a farmers market or your neighbors garden if she shares her harvest.

    Our family loves tuna salad, and we eat it often. We prefer the solid white albacore tuna in water. We never buy tuna in oil. I prefer the tuna salad on crackers or toast, but other family members prefer it on bread not toasted. We add different ingredients to the tuna to change it up. Your recipe sounds delicious. Thanks for sharing.

    We love tuna - I buy white albacore without soy protein added if I use canned, and we grill fresh tuna at least once a week. YUM - congrats on your Sunshine Award!
