Hot and Sour Soup
Hot and sour soup is a traditional soup from Sichuan, China province. This soup commonly made from meat based stock, lily bud, wood fungus, tofu, bamboo shoots, chili and vinegar. American Chinese version of hot and sour soup simplify the ingredients to tofu, bamboo shoots, shiitake mushrooms, vinegar and egg and thicker than Chinese version. There are so many variants of hot and sour soups recipes all over the internet and cookbooks.
This soup is favorite among Chinese foods lover. Hot, sour and savory create a complex flavor; nice textures of smooth, thick and crunchiness of bamboo shoots, and great appealing color make this soup is a winner in every dinner table. Its not difficult to make this soup. All you need is some simple and decent ingredients and little bit of cooking improvisation. At very little fraction of cost you can make this soup at home and taste delicious healthy hot and sour soup.

Hot and Sour Soup Recipe
Very easy to make. Ready in 10 minutes.
Ingredients:
4 oz chicken breast, diced
1/2 tsp cornstarch
1/2 tsp salt
1/2 tsp soy sauce
6 dried shiitake mushrooms
1 block firm tofu
4 cups chicken broth
3 tbsp Chinese black vinegar or white vinegar
1 tbsp dark soy sauce
1 tsp salt
1/2 cup shredded bamboo shoots
2 tbsp water
2 tbsp cornstarch
1/4 tsp ground white pepper
2 eggs, slightly beaten
2 tsbp sliced spring onions
1 tsp chili paste or sambal oelek
1/2 tsp sesame oil
Method:
In a bowl, mix diced chicken breast, 1/2 tsp cornstarch, 1/2 tsp salt, and 1/2 tsp soy sauce. Stir well, cover and refrigerate at least 20 minutes.
Soak shiitake mushrooms in hot water for about 30 minutes or until soft. Remove stems, rinse, drain and squeeze excess water then slice thinly. Cut firm tofu into small pieces.
In cooking pot, heat chicken broth, Chinese black vinegar, 1 tsp salt, 1 tbsp dark soy sauce to boiling. When its boiling reduce the heat, add chicken breast, mushrooms, tofu and Napa cabbage. Simmer about 5 minutes.
Meanwhile, mix 2 tbsp water with 2 tbsp cornstarch and ground white pepper. Add this thickening agent mixture into soup and stirring contantly. Heat the soup to boiling and pour eggs slowly into soup and continue stirring with fork until egg forms thread. Add spring onions, chili sauce and sesame oil. Remove from heat and ready to serve. Serve hot with some crispy noddles.

- Hot and sour soup is always a must for me when going to chinese restaurants. I specially love it when I'm not well (when I have a sore throat or cold) because I believe it helps with the sore throat. The vinegar and the hotness from the chillies helps with decongestion. Anyway, love chinese food in general.
