However, I'm a gourmet, therefore, these recipes must be tasteful, and my quick and easy paella de mariscos recipe is fast and delicious!
I grew up in a multicultural family, therefore, I'm accustomed to different types of foods. I'm fond of Spanish cuisine and more particularly of paella de mariscos; which I ate as standard meal once or twice a month since my early childhood. And I still eat paella de mariscos as much as I can, whether I go to Spain or stay in my homecountry. When I'm not in Spain, I cook my own paella with seafood, rice and other ingredients available where I am. My quick and easy paella de mariscos is so good that my friends said that it's even more tasteful than the one served in restaurants!

Traditional Paella de Mariscos Recipe
How to prepare this easy paella recipe

Traditional Paella Valenciana served to tourists in Spanish restaurants are often prepared with both seafood and chicken - sometimes with rabbit (conejo). It is absolutely normal since in some Spanish regions traditional paella isn't prepared with seafood at all but only with chicken or rabbit or chorizo, etc. So, the "Paella Valenciana" does include both seafood and chicken. But personally, although I really appreciate a Jambalaya with both crayfish and chicken I'm not fan of chicken in my paella and thus, I never add it to my personal paella recipe.
So, here are the ingredients needed to prepare a traditional paella - I mean the one that is time consuming. Please take note that I cook traditional paella for two people but portions are quite large and one can keep the leftovers in the fridge for a few days or even in the freezer for a few months.
Before starting the recipe make sure that you have a real paella pan on hand!

Secret number one for a tasteful paella is to use a traditional paella pan. My favorite one is the enameled pealla pan because it extraordinarily protects extraordinarily the taste of food, instead of the steel or the non-stick pan.

Paella Valenciana with Chicken and Seafood

Preparing a paella de mariscos can take some time. However, I always try to prepare quick and easy recipes. Thus, I found a way to reduce the paella de mariscos cooking time.
Whenever I want to prepare a quick but traditional paella de mariscos, I buy frozen cooked seafood as well as frozen chopped peppers, onions and garlic so that I save time on cleaning, chopping and cooking time. I replace fresh chopped tomatoes by 1 can peeled crushed tomatoes. Prawns are the only seafood I don't use ready-to-cook. I also do not cook anything separately.
Here's how to prepare my quick and easy paella de mariscos recipe:
- Heat olive oil in a paella pan and add the frozen chopped onion, garlic and peppers, mix until onions are melted
- Then add the can peeled and crushed tomatoes
- Add the squid rings and cook for a while (squid is harder to cook than any other of these ingredients)
- Once squid rings are 1/2 cooked, add the rest of seafood, the green beans and rice including the mussles
- Add 2 cups water for one cup rice
- Add 1 fish stock cube, salt and pepper to taste and saffron
- Cook until water evaporation
Difference between both recipes? My quick and easy paella de mariscos doesn't look as beautiful as a traditional paella but it is as tasteful as the longer paella recipe!

Secret number two for a tasteful traditional paella: only use Spanish or Mediterranean rice - Risotto rice or Uncle Ben's long grain rice are not an option for paella. Spanish rice provides paella with an authentic taste. Although most supermarkets provide ready-made paella made with long grain rice, they never taste the same way as an authentic paella made with Spanish rice.

Select the best saffron to "perfume" your authentic paella de mariscos. Although I myself, use food coloring products to color my paella (especially when I'm out of saffron), those products aren't a good alternative as they can't be used like any kind of spice: most are tasteless or simply don't have the same taste as authentic saffron. Saffron provides paella de mariscos with a very special taste, which is the reason why it's an indispensable paella ingredient.

- I love paella but never dare to make it. The way you do it looks simpler than all the recipes I found. I love mine with chicken and seafood, chorizo could be nice too in there.

- The first time I has paella I was in Puerto Rico and it was awesome. We tried to find a simple recipe when we got home and found one that was too simple as it substituted a lot of ingredients and it just wasn't the same. I am thrilled to find this lens and have now added a paella pan to my wish list. A very well done lens and we shall try your recipe when I get my pan of course.
