Easy Pancakes Recipe: The Perfect Buttermilk Pancake

Buttermilk Pancake Recipe, customized by me with much trial and error!

This pancake recipe is a simple one, using bisquick mix and yogurt to give it some unique buttermilk flavor. It also uses vanilla and almond extract. These pancakes turn out tasting like mini cakes, and they are so good that my husband always requests that I make these!

These are delicious for breakfast, brunch, or just snacking. I'll eat them plain, or with maple syrup and almond butter.

7 Simple Ingredients

2 Cups Bisquick Mix
1 Cup Plain Yogurt
1 Cup Milk
1 Teaspoon Baking Soda
1 Egg
1/4 Teaspoon Vanilla
1/4 Teaspoon (or less) Almond Extract (Optional)

1. Stir all ingredients until blended.
2. Heat Griddle or Skillet to medium-high heat or electric griddle to 375 degrees.
3. Add a little bit of butter to the hot griddle or skillet.
4. Surface is ready when a few drops of water sprinkled on it dance and disappear.
5. Pour about 1/4 cupfuls onto the hot pan or griddle. Or more for big pancakes, or less for mini pancakes.
6. Cook until edges are dry. Turn; cook until golden.

1. The first batch of pancakes is usually slowest, and each batch of pancakes seems to cook faster. So be ready for really quick pancakes!
2. Don't flip the pancakes more than once. This tends to toughen them.
3. You can add more butter between pancakes batches if you'd like to.
4. When more butter is used, pancakes have more of a yellow golden color, compared to a darker brown color when butter isn't used.
5. It's OK if there are still some lumps in your batter. I've heard that overmixing it can make your pancakes tough.
6. Feel free to experiment!

Vanilla Yogurt can be used instead of Plain Yogurt, but then skip the extra Vanilla.

If your batter seems too thick, add a little extra milk.

    My husband introduced me to putting peanut butter on pancakes. He also likes peanut butter in his oatmeal.... Now I've tried that too and it is wonderful! Makes it very hearty!

    I know yogurt seems like a strange thing. I discovered it one day when I wanted to make buttermilk pancakes but knew that I didn't have buttermilk and that I probably wouldn't be buying it..... I liked the idea of yogurt because I can eat it too! But I'm not likely to be drinking buttermilk, so any leftover buttermilk would probably go to waste. I recommend the plain low-fat yogurt, but I have also made this recipe with original yogurt which is thicker and also vanilla yogurt. Yummy every time!
