Pot Stickers
Pot stickers are pan fried Chinese dumplings. Basically pot stickers are just traditional Chinese dumplings (Jiaozi) or Gyoza (Japanese), Kuo Tie (Indonesian Chinese) or Momo (Nepal) but in North America, popular cooking method for Jiaozi is pan fried and because of the way they stick to the pan while cooking they get name of "pot stickers".
Jiaozi is main staples in northern China provinces but especially served during Chinese new year celebration. The shape of jiozi look like golden Yuan Bao, money used during Ming dynasty era and the name sounds like the word for paper money. Therefor it's important to serve Jiozi during Chinese new year as it's a symbol to bring good luck, wealth and prosperity. Jiaozi can be served anytime of the day, breakfast, dinner, lunch, as snack/appetizers or as main meal. Common dumpling fillings are pork, mutton, chicken, shrimps, fish, leek, chives, cabbages. Mostly Jiaozi is typically served with soy based dipping sauce, a mixture of soy sauce, black vinager, sesame oil and chili oil or paste, garlic and ginger also can be added.
You have no need to wait for Chinese new year to taste this traditional Jiaozi since it's very easy to make it at home. In this lens, I would like to share my easy recipe for pot stickers, but if you prefer healthier cooking, you can boil or steam it. If you make a big batch, you can freeze it for future consumption. Let's to be wealthier and prosperous by eating pot stickers/jioazi/gyoza.

Pot Stickers Recipe
Very easy recipe
Ingredients:
3 dried shiitake mushroom
1 lbs ground pork
1/3 cup finely chopped canned water chestnut
1/4 cup finely chopped spring onions
1 tbsp chinese cooking wine
1 tbsp oyster sauce
1 tsp corstarch
1 tbsp water
1 tsp salt
1 tsp sesame oil
a dash of ground white pepper
1/2 cup water
2 tbsp vegetable oil
2 tbsp light soy sauce
1 tsp sesame oil
Wrapper:
2 cups flour
1 cup boiling water
Method:
Soak dried shiitake mushrooms in hot water for about 30 minutes or until soft. Rinse and drain. Squeeze out excess water. Cut and remove stems; chops mushrooms finely. Then in a bowl, mix mushrooms, ground pork, water chestnuts, spring onjons, wine, water, cornstarch, white pepper, sesame oil and oyster sauce.
In a mixing bowl, combine flour and 1 cup of boiling water to form a soft dough. Knead the dough for about 5-10 minutes or until its smooth. Divide douh into about 45 small balls. Roll 1 small ball of dough into about 3 inches circle. Then place 1 tbsp pork filling on the center of circle. Make 5 pleats on the edge of one half circle. Fold circle into half and press pleated edge to unpleated edge. Repeat with remaining small balls of dough.
On a wok, heat 2 tbsp cooking oil. Add pot stickers and fry about 2-3 minutes or until bottoms are golden brown. Then add 1/2 cup of water. Cook for about 8 minutes or until water is absorbed. Remove from the heat. Serve pot sticker with mix or 2 tbsp soy sauce and 1 tsp sesame oil as sauce. For more flavor, add chopped garlic to your sauce.
