Chili Recipe

Fall and winter is the perfect time of year to pull out or find new chili recipes. Chili recipes have a lot of good things in them - protein and veggies. Chili can be made many different ways - beef, chicken, pork and vegetarian.

My favorite recipe uses ground beef and a slow cooker. I also have listed one of my favorite slow cooker cookbooks.

When Do I Make My First Batch of Chili?

In the Fall at Halloween!

I usually pull out my chili recipe for Halloween. I pull out my slow cooker and put all the ingredients in early in the mornings. While we are out Trick or Treating, the chili is finishing up cooking. It is ready to warm up us after a cold night Trick or Treating. It is so comforting to have this waiting for us when we return.

My Slow Cooker Chili Recipe

Good Ol' Chili

This recipe comes from my Current cookbook called Fix and Forget It. It is a well worn page!

Makes 6 to 8 servings
Prep Time: 10 minutes
Slow Cooker Cooking Time: 3-1/2 to 4 hrs. on High or 7 - 8 hrs on Low
Last-Minute Cooking Time: none

1-1/2 lbs. extra lean Ground Beef
2 or 3 cans (15 oz. each) Pinto Beans, drained
1 large Onion, chopped (my family does not like onions, so I use Onion powder to give the flavor)
3 large cloves Garlic, minced
1 can (15 oz.) whole Tomatoes, cut up and juice reserved (My family prefers Tomato Sauce - same size can)
1 can (6 oz.) Tomato paste
1/2 cup water
2 to 3 tablespoons Chili Powder
2 teaspoons Salt
1 teaspoon dried Oregano leaves, crushed
1 teaspoon ground Cumin
1/4 teaspoon Pepper

1. Crumble ground beef into a slow cooker. Add beans, onion and garlic.

2. In a medium bowl, stir tomatoes with juice, tomato paste, water, chili powder, salt, oregano, cumin and pepper until blended. Stir into meat mixture. Scrape down sides of slow cooker.

3. Cover and cook on high for 3-1/2 hours or on low for 7 to 8 hours until onion is tender.

Serve with shredded Cheddar cheese and saltine crackers or tortilla chips.
