When it comes to spinach, Popeye is always the first cartoon character that comes to mind. Somehow, the popularity of the cartoon does not match the popularity of the green leafy vegetable.

Spinach a Great Source of Vitamins

SpinachSpinach is really a very good source of Vitamin K, C, E, B-complex, folic acid and beta carotene. It is, also, low in calories but high in fiber. Such healthy food must be on our table. There are ways you can include it in your diet and enjoy it as well.

Spinach Stir Fry

SpinachWash the Spinach leaves. Cut them lengthwise. Prepare and cut onion, tomatoes, garlic and chili (optional) in any way you like.

Prepare pan on stove. Put fire in medium heat to prevent overcooking and evaporation of olive oil and nutrients. Pour 2 teaspoons of oil in pan and sauté the ingredients, aside from spinach, for a minute or two.

Add spinach, mix and cover. After 2 minutes, uncover and add salt, pepper or other seasonings like soy sauce. Cover for a minute and Off to the side. The cooking must be done within 5 minutes to keep the loss of nutrients.

You can sauté with ginger, too. You can, also, try sesame seeds, nuts, or veggie meat for this particular dish. Try anything to enhance the taste

SpinachThis is one of my Mom's favorites. She blends 2 leaves of spinach with avocado meat in a blender. Add milk and sugar for taste. The green color of avocado with its fatty content covers the taste of spinach. With these, everyone can enjoy a healthy fruit shake.

Steam Rolled Spinach with Rice and Veggies

SpinachThis is quite an oriental delicacy and it is really presentable for special occasions. It may have a little bitter taste but make sure soy sauce and vinegar at the side.

Use big leaves for this dish. Just combine cooked rice, tofu, garlic, onion, ginger, and chives in a bowl. The quantity of cooked rice must be 2/3 of the whole mixture. The other ingredients should be of minimal amount. Season it with salt and pepper. Dip a finger to the mixture and test with your tongue. It should not be too salty, just enough. You can add a little vinegar but not necessary.

Place fillings on leaves and roll. Place them on pan and steam. Make sure the water in steamer is already boiling. Three to five minutes is enough to cook the whole thing. You can serve each roll with a drop of olive oil to augment the smell and taste.

There are still other ways to prepare this healthy green-leafy vegetable. The most important thing is to not overcook as not to lose its nutrients.

    I've embarked on a radical dietary restructuring recently, and spinach is something I put in almost everything now; I steam it, I put frozen chunks of it in my fruit smoothies to add nutrient density, I eat it raw with fruits or mixed greens, etc.

    I used to dislike the taste of spinach when I was a kid! But after I came to US, and I tried the raw spinach salad, it was ok. So now I can eat both raw or cooked spinach!

    Like all great food lenses, this one left me drooling. When I was a kid, my mom made an excellent creamed spinach using finely diced bacon, garlic and flour. I make it a little differently, today. I substitute toasted sesame seed oil for the bacon. Delicious! Thumbs up for this lens.
