Taking the time to learn how to control fire, and making it work for your nutritional desires is in the instincts of every human being, and while some have practiced more than others, it doesn't prevent people from using it. Empower yourself by wielding the most basic of human skills in order to tantalize your taste buds, and your other senses as well.

Open Fire Rotisserie Cooking 

Sear it, and let it spin, it will just marinate in its own juices

From the hunt to the hearth, it stayed on the stick they carried it in on. After years of crispy bottoms I imagined they learned how to better cook it evenly.
They then began turning it slowly over a fire in order to cook it completely, and with more flavor since they now weren't charring it (unless they messed up) anymore.

Skip forward a few millennia to the french, ahhh.. the people that people love to hate. After using the ideas set forth by the italians, they brought it closest to what it is today. Pieces slowly roasted, juices painstakingly preserved in drip pans to make gravy with, and herbs stuffed under the skin in order to flavor our pallets.

The Basic Technique of Flambé 

How to impress with the flick of your wrist

Ah, Flambé... The shallow pan is hot, the food is sizzling, just a touch of alcohol is all that is needed to set it ablaze! Here is how to do it without being a master chef.

Before you begin cooking set aside the amount of alcohol you wish to use for the dish. Doing so will allow you to control the flow of alcohol when you pour it into the pan of cooking food.

When your entrée is almost finished, turn the high up high, make sure it is well drained of excess liquid. When that has been done take the pan off the fire as the alcohol is added to the mixture. Let the alcohol coat the pan, and then tilt it toward the flame to ignite the alcohol vapor.

This will create a spectacular display of blue, and orange colored flame licking out of the pan as it reduces.

Keep your pan away from anything that might catch fire, and when the fire has gone out, or if you needed to extinguish it by placing the lid over it. When the consistency of the sauce you wanted has been achieved place on a plate, pour sauce over the dish, and enjoy with any other accompaniments you had in mind.
