The easiest margarita cupcakes ever!
I'm all for easy, fast recipes but they have to taste really great. These cupcakes fill the bill for a yummy, refreshing, gorgeous dessert! These delightful cupcakes will take you away to a sunny island in the tropics and will totally impress your friends. Serve them in a salted margarita glass for a truly memorable treat.
Ingredients you'll need for the cupcakes:
1 yellow cake mix1 teaspoon vanilla extract
2 tablespoons lime flavored tequila
1 tablespoon fresh lime juice
2 teaspoons lime zest
Prepare the cake mix according to package directions, then add in the extra ingredients.
Bake in paper cupcake cups inserted in a muffin baking pan, according to package directions, but usually bake in a 350 degree oven for about 15 minutes. (Although I don't normally time my baking, I just watch for the cakes to brown lightly)
They should look something like this:
Moist and springy.

After baking a batch of these, your house will smell absolutely incredible.
These are "adult" cupcakes.
So there's really not enough alcohol to do anything to anyone, but these are not a favorite among kids. They just don't like them. But moms and dads can't get enough!
This is the best frosting for your margarita cupcakes.
Holy yum.
I discovered this recipe on the Cupcake Project blog, and I'm telling you, the girl's a miracle worker with frosting. Make this, you will be so happy you did:Ingredients:
1/4 cup butter, melted
1 tbsp heavy whipping cream
3 tbsp lime juice
1 tbsp tequila
2+ cups confectioners' sugar
coarse sugar and salt for "rims"
Cream together butter, heavy whipping cream, lime juice, tequila, and 2 cups of confectioners' sugar. Add in more sugar as needed to make the frosting smooth and spreadable. Spread on cupcakes and roll the edges in a small amount of coarse sugar and salt (poured into a small bowl, so it's easy to direct it).
