Easy Shortbread Recipe

Shortbread is traditionally an elegant Scottish biscuit served with tea and at Christmas and New Years, but for many of us it's a warm reminder of home at holiday time. It's also so easy to make, that it's a great recipe for a quick dessert or
treat.

EASY SHORTBREAD RECIPE
Preheat oven to 325°

Cream:
1 cup butter

Sift together:
2 cups all-purpose flour
1/2 cup confectioners'/icing sugar
1/4 tsp salt

Mix (no need to use a mixer, but you can if you like)
the flour, sugar, and salt into the butter.
Pat dough into ungreased cookie pan.
Pierce through with fork every 1/2 inch.

Bake 25 to 30 minutes.

Cut while warm.
Let cool, harden and serve.

Shortbread can be served in finger shapes, or cut with a cookie cutter. You can sprinkle it with white sugar or decorative colored sprinkles. Serve on a doily laced plate as grandma did or make batches in tins to give as gifts at holiday time.
