Not all foods are what they seem! Some foods are safe and healthy, some are not. Some can be deadly!

In the following modules we shall give you positive information and negative information from a Consumer's Beware perspective. It is important that you know about all the wonderful foods out there and also know the dangers of some of the other foods.

We are hoping to put up some low glycemic recipes for our visitors. Donations for that would be wonderful as well. We may donate a whole lens to recipes if we get enough recipes to warrant it. We would need breakfast, lunch, supper and snack recipes.

Exploding Water

What water can do when it is overheated in a microwave oven...it explodes...in your face!

Be careful how you microwave water!

From our local newspaper: A 26-year old man put a cup of water into the microwave to make a cup of coffee. He set the timer pretty high because he wanted the water to boil. When the timer shut off, he removed the cup from the microwave and noticed the water was not boiling, but suddenly the water in the cup "blew up" into his face!

The cup remained in tact, but all the water had flown out into his face due to the build up of energy. His whole face was blistered with 1st and 2nd degree burns which may leave scarring. He may also lose partial sight in one eye! His doctor told him water should never be heated alone in a microwave!

They contacted General Electric and here is their explanation:
Liquids do not always bubble when they reach the boiling point when microwaved. They can actually get superheated and not bubble at all. The superheated liquid will bubble up out of the cup when it is moved or when something like a spoon or tea bag is put into it!

A sceince teacher explained it this way:
The water heats faster than the vapor bubbles can form. If the cup is very new then it is unlikely to have small surface scratches inside it that provide a place for the bubbles to form. As the bubbles cannot form and release some of the heat that has built up, the liquid does not boil, and the liquid continues to heat up well past its boiling point.

If the liquid is bumped or jarred, it causes just enough of a shock to cause the bubbles to rapidly form and expel the hot liquid.

If you pass this on, you could well save someone from a lot of pain and suffering.

Salmon is Good for You!

Both farmed and wild salmon are good for you and far outweigh the small amount of mercury contained in it.

Just eat two healthy servings per week. Health Canada claims Salmon is listed among the safe fish to eat, with very low levels of mercury. The benefits are so much greater!

Listen to this! A 100-gram serving of salmon contains all the following:

Selenium, about 70% of the daily recommended requirement for adults! Selenium is an important antioxidant and is necessary for normal functioning of the thyroid and immune system..

Vitamin D, important for bone health. This vitamin is currently being studied for its role in lowering risk for diseases.

Omega-3 fats, a significant source which contribute to heart health and support the normal development of the brain, eyes and nerves. Studies are also exploring the association of the intake of omega-3 fats with improved blood pressure and reduced risk of stroke, cancer, asthma, depression and type-2 diabetes.

Salmon is also very high in protein, low in saturated fat and an excellent source of vitamins B6 and B12, niacin and phosphorus.

SO ENJOY TWO MEALS A WEEK USING SALMON FOR YOUR PROTEIN!

Eggs ARE good for us!

Eggs are an important dietary source of choline, a nutrient required for the normal function of all cells.

Eggs are also a source for dietary cholesterol (about 190 milligrams in a large egg yolk), but for most healthy people, it appears that the saturated fat and transfat in your diet has much more signifcance in terms of blood-cholesterol in the food you eat. Eating an egg per day does not increase the risk of heart attack or stroke in healthy people.

People with diabetes or some other illness would seem to be a bit more at risk. An elevated blood-cholesterol level is a risk factor for heart disease. About 80 percent of the cholesterol in your body is produced by your liver, and the other 20 percent comes from the food you eat. So eat wisely and enjoy your eggs.

A Mango, anyone?

Mangoes contain little sodium, almost no fat and they are low in calories! They also contain a wealth of nutritionally-active compounds.

Besides their great taste, mangoes are rich in nutrients including folic acid, viatmins A and C, potassium and fibre.

They also contain a variety of plant chemicals including quercetin and mangiferin. Both chemicals have great health benefits. The March 2009 Reader's Digest has a complete article on the benefits of mangoes for wellness, including some great recipes using mangoes.

Fresh mangoes are usually available at the larger food chains. Some stores carry dried mangoes and even canned mangoes.

Eating mangoes is deliciously messy because of its juiciness and large flat seed in the center.

Some nutritional facts: Mangoes are an excellent source for Vitamin C, containing almost 40 percent of an adult's daily requiarement! Example: One half of a mango (about 100 grams) has 67 calories, is naturally low in fat and sodium, has 2 grams of fibre, significant amounts of beta-carotene and potassium. A mango, anyone?

Drink LOTS of water!

Our body consists mostly of water and needs to be replenished on a regular basis every day!

Important facts about WATER you need to know
1. 75% of Americans are chronically dehydrated (probably half the rest of the world as well.)
2. The thirst mechanism in our bodies for most of us is so weak that it is often mistaken for hunger! If you feel hungry when you shouldn't be, drink water, lots of water.
3. Mild dehydration can slow down one's metabolism as much as 3%.
4. One glass of water often shuts down midnight hunger pangs!
5. A lack of water is the #1 trigger for daytime fatigue.
6. 8-10 glasses of water could significantly ease back and joint pain for up to 80% of sufferers!
7. A mere 2% drop in body water can trigger fuzzy short-term memory which can cause trouble with basic math, difficulty focusing on the computer screen or on a printed page.
8. Drinking 5 glasses of water daily decreases the risk of colon cancer by 45%, slashes the risk of breast cancer by 79% and one is 50% less likely to develop bladder cancer.

Are YOU drinking the amount of water you should every day?

Glass of coke anyone?

Bits and pieces of interesting information on coke and how it can affect you if you drink it!

1. In many USA states the highway patrol carries two gallons of coke in the trunk to remove blood from the highway after car accidents.
2. You can put a T-bone state in a bowl of coke and it will be gone in two days!
3. Clean a toilet with coke. Pour in coke, let sit for one hour then flush! The citrus acid in coke also removes stains from vitreous china.
4. To remove rust spots from chrome car bumpers, rub the bumper with a rumpled-up piece of Reynolds Wrap aluminum foil dipped in coke!
5. To clean corrosion from car battery terminals, pour a can of coke over the terminals to bubble away the corrosion.
6. Empty a can of coke into a load of greasy clothes, add detergent and run through a regular cycle. The coke will help loosen grease stains.
7. It will also clean road haze from your windshields!

The active ingredient in Coke is phosphoric acid. Its pH is 2.8. It will dissolve a nail in about four days. Phosphoric acid also leaches calcium from bones and is a major contributor to the rising increase in osteoporosis.

To carry Coke syrup (the concentrate) a commercial truck must use the Hazardous Material place cards reserved for highly corrosive materials. The distributors of coke have been using it to clean the engines of their trucks for about twenty years.

Blueberries...great!

Did you know that blueberries are high in antioxidants and are just what your body needs to perform well!

Blueberries rank number one in antioxidant activity when compared to forty other fruits and vegetables, according to a recent U.S. Department of Agricultural study. There is strong evidence for blueberries helping to provide good health! (These would be a wonderful addition to your glycemic diet, especially when they are fresh!)

According to Kathy Gottschall-Pass, a nutritional scientist and blueberry researcher at the University of Prince Edward Island, preliminary studies suggest that blueberries can slow brain aging, possibly protect the brain from damage by strokes and seems to help prevent placque from forming in the arteries! (Sounds like we all could use this one.)

She cautions that just eating blueberries won't fix a bad diet, but adding these high-antioxidant berries to your recommded daily fruit and vegetable intake is definitely a step in the right direction.
