My Trip To Australia... Beautiful Country, Delicious Pavlova
It was a fantastic trip... starting in Sydney, and then Newcastle, where I stayed with friends. Together we drove up the east coast of Australia to Surfer's Paradise ,Brisbane, Rockhampton, and then a day boat out to Coral Island in the Barrier Reef. We returned to Sydney via the interior.
I saw so many amazing things! But I also ate some amazing food. One dish I brought back with me? Pavlova.
Pavlova is a meringue based, whipped cream filled, fruit topped, delightful concoction. Easy to make, and delicious to eat. It's light, airy, sweet, and fruity....perfect for summer.
If you can't get all the way to Australia... make yourself a Pavlova...close your eyes... and let the flavors melt across your tongue.
You're almost there.
What is Pavlova
Where did it come from?
Pavlova is a dessert with a meringue base that was named for the great Russian ballerina, Anna Pavlova.Both the Australians and the New Zealanders feel that they invented it.
I don't have a dog in that fight.... I just like to eat the dessert.
(she does look like she's tucked into some fluffy meringue, doesn't she?)
Classic Pavlova
Straight from the Pages of the Australian Woman's Weekly Cookbook

- Serves: 6 to 8
- Prep Time: 15 to 20 min
- Total Time: 2 hours
When I travel, my favorite souvenir to bring home with me is a cookbook. To me... nothing brings back the memories like the foods.
Pavlova is a fantastic dessert. Sweet meringue that's crisp on the outside and marshmallowy inside. Filled lightly sweetened whipped cream or another flavored cream, and then topped with fresh fruit.
I've included step-by-step instructions, but it really is quite easy to make.
You can make one large Pavlova that can be sliced with a serrated knife, or smaller individual servings.
Top with your favorite summer fruits... and enjoy.
Ingredients
- 3 Egg Whites
- 3/4 cup Superfine Sugar
- 1/4 cup Granulated Sugar
- 1 Tbl. Cornstarch
- 1 tsp. lemon juice
- 1 1/2 cups Whipping Cream
- 2 - 3 Tbl. granulated Sugar
- 2 cups diced Fruit.. kiwi
- berry
- peach
Instructions
Preheat oven to 250 degrees Fahrenheit
Prepare a baking sheet....
Get a sheet of Wax Paper or Parchment Paper... trace circles on it the size of your Pavlova
I used an 8 inch and a 5 inch plate, and traced around them to make a double stacked Pavlova
For smaller individual Pavlovas, trace around a 4 inch bowl.
Then flip the paper over (you don't want to bake on the ink)
In a mixer, beat the egg whites until soft peaks form. Slowly add the superfine sugar. Beat until completely combined. Now you have a meringue!
In a small bowl or measuring cup, combine the cornstarch and granulated sugar. Then with a spatula, fold it into the meringue.
Fold in the lemon juice.
Now....
Using the spatula, spread some of the meringue into the circles you drew. You want it to be about 1/4 to 1/2 inch thick. This is not rocket science, don't go hauling out rulers and calculators... just eyeball it.
Put the rest of the meringue into a piping bag with a big round or star tip. Pipe a higher decorative border around the edge of the circles.
Put the baking sheet into the oven.
Let the meringues bake at 250 for 45 minutes. Then shut off the oven... and leave the pan in the oven to cool.
Go read a magazine... fold some laundry... or make a quick market run. It's not going anywhere... especially if the oven is off.
ASSEMBLY-
Whip up the whipping cream adding sugar slowly (taste it to see how sweet you want it). Now.. we are looking for soft peaks here, not butter, so keep an eye on it while it whips. Put down the phone.
Make sure you have some diced up fruit. I used strawberries and kiwis, because that's what I had... but you can use any berry, peaches, apricots, or even canned fruit if needed. I LOVE passion fruit on my pavlova... it cuts the sweetness so well... but I couldn't find passion fruit in 3 different stores, so I let that idea go.
To make a two level Pavlova, carefully peel the larger meringue off of the paper, and put it onto your serving plate. Fill the cavity with whipped cream, and cover with about half of the fruit.
Peel the smaller meringue off of the paper, set it on top of the bigger one. Fill it with whipped cream and the rest of the fruit.
EXTRA-Because I couldn't find passion fruit, I wanted to make a different sauce to go over the pavlova. I put a kiwi in the blender, and blended it to sauce consistency... then I drizzled it over the pavlova.
That's it!
For small Pavlovas- just fill the cavity of each meringue with whipped cream and fruit. Done.
To serve the large Pavlova.... cut with a serrated knife using a sawing motion. It will look a bit messy.... but it's so good

What Was I Doing In Australia?
It started with a phone call...
Well, actually it started with a trip my friend and I took to Europe the summer after graduating High School. Both of us have family there, so we combined a family visit with a 2 week Contiki bus tour... that's right... one of those 2 weeks in a bus with a load of 18 to 35 year olds,if it's tuesday it must be Belgium Tours.On the tour we met loads of people from other English speaking countries. New Zealand, United States, South Africa, Zimbabwe, England, Canada, and of course... Australia. At the end of the trip we all exchanged addresses and phone numbers, and even stayed in touch!
In the middle of the night a year later, I got a phone call from Kent, who came from Newcastle. Could he come to stay for a while? He was going to travel through the US and visit the friends he made on the tour. OF COURSE. So, he came and stayed.
And then we arranged for me to visit Australia, and re-connect with the Australian friends we made on the trip.
December is summer in Australia... and I had a month off of school... so, plans were set, my savings account was emptied, and off I flew.
Australia is about as far away as you can get. I like that.

Friends and an Australian Christmas

My Christmas in Australia was like stepping through a mirror. Everything was backwards!
Christmas in the summer?
I'd never been away from my family over the holidays, but the family I was with could not have been nicer. It was quite warm, but for Christmas there was to be a roast turkey and all the trimmings. Family and friends gathered around the table, in our shorts, and ate ourselves stuffed. I tried my first steamed pudding (i really did like Pavlova better... but we may revisit that come Christmas time). And at every place setting was a cracker... sort of a tube covered in colored paper. When you putt the ends, it makes a bang, and inside you find a hat and a joke. I still have mine pasted into the scrap book.
This was such a different experience from my German Christmas, but the Ireland family was so loving, I felt right at home.

Surfer's Paradise
Long Beach, Loads of Tourists

We drove from Newcastle north to Surfer's Paradise. Now... coming from California I was most impressed to see such a LONG beach. There were also crowds of people.
I was excited to meet up with a few friends that we had met years before in Europe.
By day we played in the waves, at night we went dancing in the clubs.
Lots of shops, I even bought myself a new swim suit..... wish I still fit in it.....

Rockhampton was to be our turn around point... but we did stay for a few days to enjoy the heat and the water.
And the BEST FISH AND CHIPS EVER!
A new resort... the Capricorn Iwasaki... had just opened, and it was still waiting for tourists. We decided to help them out.
HUGE pool with rivers and waterfalls. Nicely appointed rooms. Delicious food.
And a funny Wallaby that kept opening the automatic slider doors to the lobby.... he drove the reception staff nuts!
Day Trip To Masthead Island
South End of Great Barrier Reef
Amazing, Astonishing, Unbelievable, Fantastic
Snorkeling takes you to another world...and this other world... the Great Barrier Reef left me awestruck.
From Gladstone we took a day boat out to the Reef.... and then we splashed our way on foot onto Masthead island. The day was spent snorkeling and exploring.
Don't you love the sound of the sea? When you are in the water... it sounds like another planet... the click click click sound... someone told me it's parrot fish eating coral. All I know is that it tells me I'm not in my regular world.
There were huge numbers of fish, in all colors and sizes. Coral, anemones and even lowly sea cucumbers.
I even saw my first sea turtle.
It was a perfect day.
Miles Australia
Miles and Miles from Anywhere

Because I needed to see an authentic Australian town, we drove back to Newcastle with a bit of a detour to the interior (not deep interior... just 300 km west of Brisbane).
Miles, Australia... miles and miles from anywhere. To me it was like a movie set. The pub still had a separate room for women.
At the time there weren't many places to eat, and we all had a craving for pizza anyway, so we went to the local pizza place. They served THE BEST garlic bread in the history of time.
See... of everything... it's the food memories that stick with me.

I end my adventure

Sydney is one of my favorite cities in the world... it's clean, friendly,walk-able, and the food is great
I wanted to see it all... so we squeezed in as much as humanly possible... a Harbor Cruise, a visit to the Opera House, the Sydney Harbor Bridge, the Rocks, the Botanical Gardens and of course, Bondi Beach.... where we watched a Lifeguard Contest.
On New Years Eve, dinner was high up in the revolving restaurant in the Sydney Tower. The food was amazing... I had a lobster mornay that was just too good.. and for dessert? of course...Pavlova. The perfect end to a perfect meal.
And the end of my vacation.
I had to get back on the plane to the US the next day.....

- My pavlova has up to a dozen eggs in it. No rim- I mound it up in my cast iron frying pan! Have never used lemon juice- interesting! Your lens is a fun foreign perspective! You would have driven right by my home town of Nambucca Heads. About 4+ hours north of Newcastle but south of Coffs harbour. Glad your memories are so wonderful!
