Meet Ebony Wilder

Ebony Wilder is the stalwart, the housekeeper who manages Riversleigh Manor and le Enchanteur's Villa in the Lemurian City of Ladies. But, do not be deceived by the appearance of this lady with the grey hair and rimmed glasses. She has a secret identity. Ebony Wilder is none other than the fearless Captain Wilder who sailed the seven Lemurian seas in the feared pirate ship, the Calabar.

For now Ebony is happy to be at Riversleigh to support Sibyl Riversleigh, who has invited a crowd for the Christmas Holiday Season. You can join in with all the fun, come to know Ebony and help create a very special Ebony Wilder Recipe Book for those who love all that is Riversleigh.

Come down to the Riversleigh kitchen and, over coffee and cake exchange a recipe with Ebony Wilder. Ebony will have her staff make dinner each night, some times for guests to have in their rooms, and if she knows what you like they will make it for you.

Of course, staff will accept voluntary help in the kitchen if you feel like rolling up your sleeves and joining in.

Be warned! The biggest risk you run in Ebony's kitchen is 'Death by Chocolate'.

Tequila Cookies

1 cup of dark brown sugar
1 cup (2 sticks) butter
1 cup of granulated sugar
4 large eggs
2 cups of dried fruit, such as dried cranberries or raisins
1 tsp baking soda
1 tsp salt
1 tsp fresh lemon juice
1 cup coarsely chopped walnuts or pecans
2 cups all-purpose flour
1 bottle Jose Cuervo Tequila (silver or gold, as desired)

Sample the Cuervo to check quality.

Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl.

Add one teaspoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup just in case.

Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit. Pick the frigging fruit off floor.

Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver.

Sample the Cuervo to check for tonsisticity.

Next, sift two cups of salt, or something. Check the Jose Cuervo.

Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find.

Grease the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner.

Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

Gram's Grudge Fudge - a 4-generation tradition

So far this recipe has been used by 4 generations of my family - and we have the big Swedish hips to prove it! We've been making it every year since the 1950s. It is always a hit - at potlucks, family dinners, office parties, gifts for teachers and

4 1/2 cups sugar

1 can evaporated milk (I think it's 12 ounces)

3 (or more!) cups chocolate chips (traditional is to use all semi-sweet, but you can try milk, white, or butterscotch if you like)

2 cups chopped walnuts or pecans (your choice)

1/2 pound (8 ounces) butter or margerine

28 large marshmallows (or about 3 cups of miniature marshmallows)

2 tablespoons of vanilla

Pour milk and sugar into a large, heavy bottom pan (I like to use a Dutch oven on the stovetop).

Bring the mixture to a boil - keep boiling for 9 full minutes, stirring constantly. (If you don't stir the full 9 minutes, the texture is wrong - so laugh, tell stories, have some egg nog - but keep stirring at a full boil for 9 whole minutes. The mixture may rise up all bubbly - if it gets too high, turn down the heat a little, but keep it at a boil.

Take the pan off the heat and add the butter/margerine, nuts, chips, marshmallows, and vanilla. Stir to melt and mix - use a strong utensil. Make sure it is all mixed well. It takes awhile - but it is worth it.

Pour fudge into a buttered pan - I like to use a big cookie sheet, 12 in. by 17 in., about 1 inch deep. Chill for at least 2 hours before cutting. Makes 5 pounds.

* I often make this a month before Christmas - then sample it periodically, for "quality control". For those who prefer a dry fudge, I take it out of the pan, cut it, and flip it over, exposing the bottom to the air, so it dries out more quickly. (And of course if there are any crumbs, guess who gobbles them up?!!)

Pound Cake Recipe
I have been making this pound cake since I was about 10 years old. Now, pound cake is sort of a Southern specialty, and I always had a pound cake as my birthday cake when I was growing up, and at Christmas there is always plenty of it around. My grandmother would make a pound cake around Thanksgiving and then spend the next month regularly soaking it with alcohol - I'm not sure what sort. I just know that I was never allowed near that cake, and you could smell it across the room!

This picaresque bodice-ripper is far more engrossing than one might expect, but then again it has a good pedigree. Based on a novel by Daphne du Maurier, the Restoration-era tale concerns Dona St. Columb (Tara Fitzgerald), a Catholic in the age of William and Mary and a survivor of Cromwell's repression. Married to an older, foolish aristocrat whom she easily manipulates, Dona has cultivated a suggestion of scandal to enhance her natural reputation as a tough, willful, cigarette-puffing Londoner. In an effort to get away from intrigues at the royal court, Dona takes her two children and heads for the family's Cornwall estate, where she hopes to find peace. She soon discovers, however, that French pirates turned patriots have been making use of her land, home, and even housekeeping staff to aid in France's war against Britain. Initially outraged, Dona is soon swayed by the pirates' passion for their cause and feels the absence in herself of a similar authenticity. The solution: join the raiders on their exploits and become the lover of their handsome captain (Anthony Delon). The story hums along most entertainingly and Fitzgerald's focused performance, both harsh and sensuous, provides a sturdy backbone to the drama. Delon mostly smolders, which is enough here, but the terrific supporting cast brings a dimension and color that makes the whole production more than agreeable. The ending is particularly satisfying, ultimately turning Frenchman's Creek into a human adventure that is more than the sum of its swashbuckling parts. --Tom Keogh
