What is an Eclair? Where do they come from?

An eclair is a pastry made with choux pastry (profiterole dough). The dough is piped into an oblong shape with a pastry bag and baked until it is crisp and hollow inside.Once cool, the pastry then is traditionally filled with a coffee- or chocolate-flavored[1] pastry cream (crème pâtissière), custard or whipped cream, and topped with fondant icing of the same flavor as the filling.[2] Other fillings include pistachio- and rum-flavored custard, fruit-flavored fillings, or chestnut purée.
In some parts of the United States, long johns are marketed under the name éclairs, though the two are not identical. A long john uses donut pastry and is typically filled with vanilla pudding, making it a simpler and inexpensive alternative to the éclair.
Little is known about the origin of the éclair, but it is known to have originated in France around the turn of the nineteenth century.
"Eclair" is French for "flash", though there is no known linkage to this. Many food historians speculate that éclairs were first made by Marie-Antoine Carême, a famous pastry chef for French royalty.

Make Your Own Eclairs!
Chocolate Eclair Recipe From Cooks.com
ECLAIR:1 c. water
1/2 c. butter
1 c. flour
4 eggs
Bring to rolling boil water and butter. Take off heat. Add flour and stir with spoon until ball can be formed. Add eggs. Beat like crazy. Mix until dough is very stiff; otherwise it will run all over pan. Drop by full teaspoons onto a cookie sheet for individual serving; put in a circular ring or in a strip. Bake 45-50 minutes at 400 degrees. Cool out of draft.
FILLING:
2 pkg. instant French vanilla pudding
2 1/2 c. milk
1 (8 oz.) container Cool Whip
1 tsp. vanilla
Mix pudding and milk. Mix well. Fold in Cool Whip and vanilla. Slice eclair in half and fill generously with entire amount of filling. Replace top of eclair. Drizzle top of eclair with Chocolate Sauce.
CHOCOLATE SAUCE:
6 oz. semi-sweet chocolate chips
1 1/3 c. canned milk
1/2 c. butter
2 c. powdered sugar
1 tsp. vanilla
Melt chocolate chips and butter together. Gradually add milk and powdered sugar. Bring to boil. Stir continuously. Boil for 8 minutes. Remove from heat and add vanilla.

CHOCOLATE ECLAIRS / INGREDIENTS: 2.5 oz / 70g plain flour and a pinch of salt quarter pint / 140ml water 2oz / 55g of butter 2 eggs Small bar of chocolate for decoration half a pint / 285ml of double cream ( and a piping bag) METHOD: ·Pre-heat the oven to 200 C / 390 F ·Place a roasting tin of boiling water on the bottom shelf of the oven ·Place the butter and water into a saucepan and heat on the stovetop. Make sure the butter is fully melted before bringing the mixture to the boil ·Sieve the flour and salt into a bowl ·As soon as the butter and water mixture is boiling nicely, tip the flour and salt into the saucepan (tip it in all at once). Mix together really hard with a wooden spoon until it forms a soft ball ·Take the saucepan off the heat and allow to cool for a few minutes ·Beat the eggs well together ·Add the egg, a little at a time, to the dough in the saucepan. Continue to beat it well with a wooden spoon. ·Return the dough to firmness each time before adding more egg. (The dough should be smooth, shiny and firm once all the egg has been added) ·Place the dough (choux pastry) into a piping back and squeeze sausage shapes of about 3 inches (7.5 cm) onto a baking tray. ·Place in oven for around 20-25 minutes until risen and golden ·With a knife, pierce a little slit in the side of each éclair and then return them to the oven for about 5 minutes (this helps them to dry out a little more) ·Remove the éclairs from the oven and leave to cool ·Meanwhile, whip the double cream and melt the chocolate ·Once cooled, split the éclairs open and scoop out any soft pastry that you may find ·Fill the éclairs with the whipped cream and sandwich them together ·Spread the melted chocolate on top of each eclair TOP TIPS: ·A roasting tin of boiling water on the bottom shelf of the oven helps the choux pastry to rise.

- I don't make eclairs that often but one thing that makes a huge difference in the taste is to make your own pudding from scratch. It takes longer but it has a much better flavor than the instant French vanilla pudding. I have found that it's best to make the pudding a day ahead and let it chill in the refridgerator overnight. Great lens. Now I'm hungry for some homemade pastries.
