Do You Enjoy Baking? Are You An Edge Person? A Brownie is Not a Brownie Without an Edge?
I first saw this on the Oprah Favorite Things Show for 2010. Once a year, except this year when she did it twice, Oprah picks out the coolest things that she really loves and shares them with her hand picked audiences. This Brownie Edge Pan was among her favorites!
I love Chocolate Brownies. But I have never cared for the brownie in the middle of the pan. It is flat and there isn't any crunch to it. What's that all about?? You've got to have an edge to a good brownie. But when you fill the brownie pan with your perfect brownie recipe batter, there are only so many edges. Some are going to do without... sigh...what to do?
Well there is now a solution! The most ingenious Edge Brownie Pan. Very clever! It has walls throughout the pan that makes continuous edges for your brownies. You can't help but have an edge.
Now isn't that grand!

Ingredients
- 1/2 cup vegetable oil
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon brewed espresso
- 1/2 cup chopped walnuts
Instructions
1. Preheat oven to 350 degrees F. Have your non stick Baker's Edge Brownie Pan ready.
2. In a medium bowl, mix together the oil, sugar, and vanilla and coffee. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired. Spread the batter evenly into the brownie edge pan.
3. Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares.
Tip:If you don't have any brewed coffee you can use 1 teaspoon of instant espresso granules. The coffee makes the chocolate soooooo rich, with great depth of flavor, you can't even tell it is in there but you can really tell when it isn't.

- I must be in the minority because I don't like the edges, they are all crusty and hard, I like the chewy middle brownies. But I do think this would be good for lasagna!

- the brownie edge is a tricky thing...delciously chewy if the brownies are not overbaked, but hard as a rock if they are! this pan is quite cool, though :)
