My Easy Creamy Eggplant (Aubergine) Curry Recipe

I love eggplant but sometimes its difficult to know what to do with them! I do however think that eggplants, or aubergines, go really well in certain curries, and quite frequently add them to my Lentil Curry
This eggplant, or aubergine curry recipe is delicious and its hard to believe that a good portion of this creamy eggplant curry is low in calories, low in fat, satisfying and healthy! You can even cut back on the calories by using the lower fat Greek yoghurt!
This curry will keep you warm as the autumn nights draw in!


This easy vegetarian eggplant curry recipe serves 4 but can easily be halved for two people. Serve it with basmati rice or mango chutney on the side.

Ingredients You Will Need To Make This Healthy, Low Fat, Creamy Eggplant (Aubergine) Curry

Igredients for this easy, low fat vegetarian curry

  • 2 Onions roughly chopped

  • 4cm piece fresh root ginger, chopped

  • 4 tbsp toasted flaked almonds plus another tbsp for serving

  • 1tbsp curry powder

  • 1 clove garlic

  • Small bunch coriander (stalks and leaves separated)

  • 2 tsp olive oil

  • 2 Eggplants (aubergines) chopped into large wedges

  • 200ml pot thick greek yoghurt (you can use the lower fat version if you want it to be even more healthy)

Making your pastes, dressings, soups and chopping small amounts is easier with a hand blender!

This is without a doubt one of the handiest gadgets I have in my kitchen! I can honestly say that having had one for the past three years I wouldn't be without one now!
They are so useful for making pastes, dressings and for chopping up smaller amounts of ingredients! The unit is much smaller than a food processor and can be more practical and far quicker than getting out the food processor and it is much easier to store and to clean afterwards!

How To Make This Healthy, Vegetarian, Creamy Eggplant (Aubergine) Curry

Just follow these simple nstructions for making this easy vegetarian eggplant curry

  • Blitz the onions, garlic, ginger, 4 tbsp almonds, curry powder and coriander stalks until they make a paste (add a splash of water if necessary)

  • Heat the oil in your wok then fry the aubergine for around 5 minutes until browned. Scoop out the aubergine and set aside.

  • Add the onion paste and cook for a few minutes, stirring, until the onion softens.

  • Return the aubergine to the pan with the yoghurt and 400ml of hot water. Stir and simmer for 10 to 15 minutes until the aubergine is tender.

  • Season and serve over basmati rice and scatter with the coriander leaves and remaining almonds.

    You've got to try "Salată de vinete", it is very flavored and has been my favorite for many years! Wikipedia describes the way it's made here: http://en.wikipedia.org/wiki/Eggplant_salads_and_appetizers - this is more or less the way I make it too, but I always add some apple vinegar or lemon juice to it.

    I like eggplant. I think it's one of those ingredients that really enlivens a vegetarian diet. My favorite eggplant dish is baba ganoush. It's a lot of work, though.
