Just Five Ingredients and No Eggs

My grandmother always made eggnog from scratch using a traditional no-cook recipe (see below). When it first came out that people should be careful of salmonella when making eggnog grandma always said that the alcohol in the bourbon cooked the eggs and we had nothing to worry about.

A couple of years ago I came up with a solution to the egg problem AND also made the entire process much, much easier. I must have been inspired by an kitchen angel or something because now that I look back on it I have no idea how I thought this up. My "experiment" ended up tasting just like grandma's eggnog.

My Super Easy Eggless Eggnog Recipe

Grandma's recipe is a very thin drink base with the whipped cream mainly floating on the top. It has some alcohol in it, though not nearly as much as most alcoholic eggnog recipes. It's mainly for flavor. If you don't want the alcohol you could try substituting 1 to 3 teaspoons of rum or vanilla flavoring or a combination of the two.

And the miracle ingredient? Sweetened condensed milk.

Ingredients

One can of sweetened condensed milk
1/4 to 1/3 cup of good bourbon
One pint of whipping cream, whipped
Enough milk to fill a gallon container (probably a half gallon)
Freshly grated nutmeg

Instructions

Whisk together sweetened condensed milk and bourbon in a medium sized bowl. Whisk in a cup or two of milk. Pour into gallon jar. Add whipped cream to jar. Fill jar with milk. Close lid and shake. Like "real" eggnog this gets better with age and will keep in the refrigerator for several days. Shake (or stir) before serving and top each glass with freshly grated nutmeg (if desired).

That's it! How easy it that?

Try using 1-3 teaspoons of rum or vanilla flavoring instead of the alcohol.

Variation on a Theme: Lemon Meringue Eggnog

Raise your hand if you've ever had a lemon meringue pie made with sweetened condensed milk and a crushed vanilla wafer crust? Isn't that the best taste ever?

So say you want to put a new spin on eggnog altogether. Instead of adding bourbon or rum flavoring to my basic eggnog recipe above, you could substitute a half of a cup of fresh squeezed lemon juice and voila! Lemon meringue eggnog.

Except for one small problem: lemon juice curdles milk. You could get around it by using lemon flavored vodka (or make your own lemon flavored liqueur by following this recipe for Limoncello).

I looked up solutions to the milk curdling problem and someone suggested adding cornstarch. My instinct was to add 1/4 to 1/2 cup of powdered sugar, which has cornstarch in it, so maybe that's the answer. I'll have to try this out. Stay tuned.

Grandma Effie's Original Uncooked Eggnog Recipe

Ingredients

12 eggs yolks
1 lb (4 cups) powdered sugar
1/4 to 1/3 cup of bourbon
1 pint of heavy cream, whipped but not too stiff
Milk to fill a gallon jar after other ingredients added

Instructions

Beat egg yolks and powdered sugar together until smooth and light yellow colored and thickened. Whisk in bourbon. Add a cup of milk. Pour into gallon jar. Add whipped cream and enough milk to fill jar. Close lid and shake. Chill overnight. Shake or stir before serving. Add freshly grated nutmeg to each glass as desired.

There is nothing like a Kitchen-Aid mixer for whipping up cream or egg whites in no time. It's also fantastic for bread and cookie dough. I couldn't believe what a difference it made when I first got mine.

This is the smaller version with the 4-1/2 quart bowl. If you're going to make a lot of bread or cookies I would get the larger mixers, both in bowl size and wattage. It's well worth it.

Fantastic lens. I won't lie and say I knew anything about making eggnog. I usually just go to the store and by the cartons. Never have I even thought about making it myself. Perhaps the time has come to try my hand. 5 stars.
