A Healthy Delicious Eggplant Feta Dip

Eggplant Feta Dip Recipe

1 medium eggplant
2 tablespoons lemon juice
1/4 cup extra-virgin olive oil
1/2 cup crumbled feta cheese
1/2 cup finely chopped red onion
1 red bell pepper
2 tablespoons chopped fresh basil
1 tablespoon finely chopped parsley
1/4 teaspoon cayenne pepper, or to taste
1/4 teaspoon salt
Pinch of sugar (optional)
1. Position oven rack about 6 inches from the heat source. Preheat broiler.
2. Poke eggplant several places to vent steam. Place eggplant and red pepper on a foil-lined baking pan. Broil the eggplant and red pepper, watching carefully and turning every few minutes, until the skin is charred and flesh is soft, 6 to 10 minutes for the pepper; 14 to 18 minutes for the eggplant. Cool.
3. Cut eggplant in large pieces and scrape flesh away from skin into a medium bowl. Add lemon juice and mash eggplant until you have the desired consistency. I like it just a little chunky. Stir in oil.
4. Chop roasted red pepper. Mix in pepper, basil, parsley, cayenne and salt. Taste and add sugar if needed.
Flavor improves as the dip has time to blend. Dip can be covered and refrigerated for up to two days.
The Mediterranean Diet

There isn't really a single eating plan that IS the Mediterranean Diet. The Mediterranean Diet encompasses the natural eating habits of an entire region of the world.
Olive oil is the primary fat source.
Daily intake is mostly plant products in the form of vegetables, fruits, beans, cereal and other grains, potatoes, seeds and nuts.
Poultry, fish, eggs and dairy products are eaten sparingly, mostly as accents to a meal. Very little, if any, red meat is eaten.
Wine, especially red wine, is consumed in moderation.
Can you lose weight? Yes, the Mediterranean Diet is naturally low in fat, since you are limiting most sources of fat, such as cheese, animal meats and fats. Carbohydrates within the Mediterranean Diet are complex carbs and full of nutrients. If you don't overuse the olive oil, you should be able to shed pounds slowly and healthfully.
The diet is heart-healthy for same reasons. The main source of fat is olive oil, a monounsaturated fat that doesn't raise cholesterol the same way that animal fat does.
