The melding of the eggplant and fillets of fish along with the Italian seasonings, sauce, and cheese may make you feel as if you are dinning at a breathtaking Sicilian café.

Directions for Preparing Fish
Step by Step Instructions for Eggplant Fish Recipe

- Serves: 3-4
14 oz fish filets
8 oz shredded mozzarella
2 cups dry, fine breadcrumbs
14 oz tomato sauce
1 eggplant
2 or 3 beaten eggs
Oregano, basil and garlic salt, to taste
Grated Parmesan cheese
Instructions
Preheat the oven to 350 degrees F and slice the eggplant into 1/2 inch slices.
Dip the eggplant slices in the egg and then in the breadcrumbs.
Brown them in 1/4 cup of hot oil on both sides.
Arrange the browned eggplant slices over the bottom of a shallow baking dish and lay the fish on top.
Pour tomato sauce over the fish and sprinkle lightly with oregano, basil and garlic salt.
Sprinkle with the two kinds of cheese and bake for 30 to 40 minutes, or until the fish is cooked through.
