Looking after eggplant salad recipes

I am convinced that there are many recipes for eggplant salad in the world, but each housewife sometimes changes the original recipe by adding one or two ingredients to make food more desirable. Way to eggplant salad is covered more or less by smoke, but worth the effort. You can frozen the mashed eggplant and to use in winter or anytime you need it.
This salad is a perfect breakfast or supper but you can use it as an appetizer when you made a birthday party.

Eggplant is from the tropical regions of India and Burma and it started to spread to the western countries only in the 17th century. It was grown in Greece, Italy , Spain and at the beginning of the 19th century it was introduced in USA.
The fruit of eggplant contains several vitamins , like A vitamin , B and C vitamins , fitoncides and also contains substances which contributes at lowering the cholesterol level from blood.

Ingredients for Salad

Ingredients:

1 kg. eggplants
Salt and Onion (as you wish). If you like you can add garlic, too.
Mayonnaise

Salad Preparation


1.Cut the upper part of the Eggplant.




2.Put the eggplants in an oven tray and bake at high temperature.




3.When they baked take out the tray carefully and peel the eggplants.




4.Mash the eggplants.




5.Place it in a bowl and add salt as you wish and add grated onion(just a small quantity).




6.Add the mayonnaise and stir until is well blended.

How to Prepare Homemade Mayonnaise

When I prepare eggplant salad I use to add homemade mayonnaise in it.
We need the next ingredients:
- 2 egg yolks
- 2 teaspoons of mustard
- 180-190 ml. sunflower oil






1.Put the egg yolks in a bowl, add the mustard and stir well.




2.Start adding sunflower oil in small quantities and stir until well mixed. Repeat it until you get a hard mayonnaise .



Suggestion: Do not add a large amount of sunflower oil as mayonnaise will be destroyed.If this happens, you can try to add 2 or 3 drops of lemon - sometimes this little trick helps but according to my experience of preparing mayonnaise, it's better if you discard the contents and start from the beginning.

Do You Like to Prepare Eggplant Salad ?

    I have always liked eggplant. It was very hard to find in North America until recently (last 10 years) - and even then, many people seem to avoid it. I like eggplant simply fried with butter and salt, and many of the recipes (Iranian/Indian/Italian) are wonderful.
