When Life Hands You Egg Yolks...

...you can't make lemonade. Every home baker or egg white omelet eater has had an egg imbalance at some point. Whether you have a single excess egg yolk or dozens, there are wonderful recipes you can make with them.

With one extra egg yolk you can make...

1 egg plus 1 egg yolk is almost all you need to make cheese ravioli!

One egg yolk will thicken a scant half cup of liquid. Make yourself some pasta with a cream sauce.

Feel like something cold? Chocolate Cinnamon Parfait makes quick use of a single egg yolk.

If you're feeling a little adventurous, try using your one extra egg yolk in Clotilde's Roasted flour squeeze cookies.

Make a Sweet Cookie Tart Crust. Recipe here. Once made, this one yolk crust can be cooled and frozen for use later. How about some homemade mayonnaise? This recipe uses exactly two yolks, the resulting mayonnaise will keep for a week. If you've never made mayo, you might be surprised at how easy and tasty it is.

With three egg yolks, it won't be difficult to find something you'll be happy to make.

Hollandaise Sauce is a great use for 3 egg yolks. Don't know what to do with hollandaise? Pour it over green beans or asparagus, fish, or eggs benedict.

Bernaise sauce is another great flexible sauce made with three yolks.

A Greek style bechemel will use up 3 egg yolks, easy. This sauce tops moussaka, stuffed eggplant or zucchini, and pastitsio.

Three yolks is all you need to make Pastry Cream. Fill eclairs, napoleons, or a pastry crust and top it with fruit. Truthfully, it's good enough just with the fruit.

The absolute best way to use 3 egg yolks is to make hazelnut ice cream. For a hazelnut lover, it's heaven! If you don't have an ice cream maker yet, I love my Donvier Ice Cream Maker. It's not too big, easy to use, easy to clean, and absolutely silent.

With 4 egg yolks, you can make some yummy stuff.

1 3/4 cups of mayonnaise is yours for the making if you have 4 medium yolks.

Nobu's recipe for Asparagus and Salmon Roe with egg sauce is a fancy way to get the most from your yolks.

My favorite use for 4 (or 8!) egg yolks is lemon curd, and my favorite lemon curd recipe comes from The Pie and Pastry Bible.

French chocolate mousse will use up 4 egg yolks with a flourish.

Tiramisu Cake is a bit time consuming, but your egg yolks will be put to good use!

No sweet tooth but still love your carbs? Italian Easter bread will put those 4 yolks to good use.

Avgolemono is Greek for egg lemon and in Greek cuisine, it is a soup and a sauce with varied uses. This recipe for avgolemono soup will use up 8 yolks!
