Best Enchiladas in the World
Maybe not the best Enchiladas but pretty darn close. I learned how to make Enchiladas from my Mom when I was about 15 years old. Since my mom had 8 kids she always had us helping her with the cooking. The great thing about this lens is that I am going to show show you step by step how to make Great Enchiladas. I have been eating them since I was five. Now I don't just eat them, I cook them, and enjoy eating them.
When I was growing up there was only one kind of Enchilada and that was beef. But now there are dozens of different kinds and some still to be invented. Not hard to make and a lot of fun to bake.

I recommend Chile from New Mexico. I lived all over the US and New Mexico Chile is the Best. The two places that I feel have the best are Chimayo and Hatch Chile. I love the red Chile from Chimayo but and crave the green Chile from Hatch New Mexico.
New Mexico is kind of far from every where, but thats whats great about the Internet you can find it online and have it shipped right to your Casa.

Enchiladas Ingredients
1. 24 Corn Tortillas
2. 2 pounds of your favorite Meat
3. 1 pound Cheddar Cheese
4. 1/2 onion (optional)
5. 3 Garlic Cloves from bulb
6. Salt and Pepper to taste
7. 2 tablespoons of Flower
8. 2 tablespoon lard or cooking oil
9. 4-6 tablespoons chili
10. Oregano or Celentro
11. 4 cups water
How to make the greatest Enchiladas in the world.
Get all your ingredients ready. List of ingredients is on Yellow sticky note above. Chop up about 1/2 onion diced. Shred about 10 oz off cheese unless you
purchased shredded cheese. Dice up 1 to 3 garlic cloves very small. All other ingredients should be made available.
Step 2 - Make your Red Chile
Get your Chile or Stew pot and add your meat and start cooking at medium high. Add salt and pepper for taste. Once your meat is brown add two table spoons of flower and cook with meat till brown. Once your flower and meat are brown add about 4 to 6 cups of water. Add some more pepper and salt, 4 to 6 table spoons of Chile and a few pinches oregano or cilantro. Stir you ingredients together and make sure there are not Chile powder lumps. Now you added your garlic and bring your Chile stew to a boil. Once your Chile starts to boil let it simmer on low for about 30 minutes.
Step 3 - Fry your corn tortillas
Use vegetable cooking oil or lard. Fry each tortilla on each side for about 15 seconds or until soft. I prefer using an iron skillet but you can use any frying pan.
Step 4 - Prepare your Enchiladas for cooking.
If you like rolled enchiladas get a tortilla and stuff it will the Chile you just made making sure you have some meat and Chile. Added your cheese and onions and then roll your tortilla and place on oven pan or casserole dish. Then add some more cheese on top of rolled enchilada and more Chile sauce. Repeat with all of your tortillas. You should be able to make a dozen or more rolled enchiladas. Once you have all your enchiladas make bake in an oven for 15 to 20 minutes at 375 degrees.
A quicker way to make enchiladas like my mom made is to make enchilada casserole. To do this follow steps one two and three. Get your tortillas and dip them in to the Chile stew and put a layer on your casserole dish. Then add some meat from the Chile, some cheese and onions just like making a pizza. Once you have one layer done start another and repeat the process until you are out of tortillas. On the final layer make sure you cheese is the last ingredient to go on the casserole. Again Bake in the oven at about 375 degrees for about 15 to 20 minutes.
The Most Important Thing
Your Enchiladas are only as Good as your Chile. The Best Chile is from Chimayo New Mexico.
