Homemade Yogurt - Make Your Own Yogurt
You can eat yogurt plain or with fresh, dried, frozen or canned fruit. Check out my recipes for FLAVORED YOGURT, PLAIN YOGURT or YOGURT CHEESE in this lens. Granola makes a great topping on your yogurt. Check out my HOMEADE GRANOLA RECIPE Lens. Yogurt is great in smoothies, salad dressings, dips, baked goods and in other recipes.I have been using the Salton YM9 1-Quart Yogurt Maker for about 6 months. I have since ordered a second one and make two batches at a time. My sister has also purchased two of them and makes two batches at a time. I ordered two of my daughter's one recently. Years ago I had a Salton Yogurt Maker but it had 5 individual cups. I prefer making the yogurt in the Salton YM9 1-Quart Sized Yogurt Maker. You can use other containers in this yogurt maker. I use quart sized wide mouth canning jars and have purchased plastic covers for them. When the yogurt is done I just remove them from the yogurt maker and place them in the refrigerator.
How Fresh Is That Container Of Yogurt You Are Eating?
How long since it was made? How long before it reached the grocery store shelf? How long has it been sitting on the shelf in the grocery store? How long has it been sitting in your refrigerator before you took it out to eat it? I have eaten my homemade yogurt and made another batch or two or maybe even more??? before your container of yogurt had a chance to make it to the grocery store shelf! NOW I call that FRESH!!!

Recipe for Plain Homemade Yogurt
Make Your Own Yogurt - It's Easy To Do!!!
Plain Yogurt Recipe

INGREDIENTS:
3 1/2 cups milk (I use 2% milk)
1/3 to 1/2 cup instant nonfat dry milk (Optional. The powdered milk produces a thicker texture and increases the protein content.)
INSTRUCTIONS:
Stir together in a saucepan the milk and powdered milk. Heat to 180 degrees.
Cool the mixture to 110 degrees, and stir in 1/4 tsp of culture (*Tribest Yolife Yogurt Starter Cultures - 1 oz bottle). Pour into container, cover and place in **Salton YM9 1-Quart Yogurt Maker to incubate. Incubate between 5 - 10 hours or until desired tartness (I incubate it between 6 and 8 hours).
YOGURT STARTER INFORMATION:
You can use 2 to 3 tbsp of plain yogurt as the starter.
*Another powdered yogurt starter that I have used is a Yogurt Starter by Natren sold in a 1.75 ounce bottle. When using this yogurt starter use 1/2 tsp and follow the included instructions. Both of these options are cheaper than single use packets and they are very handy to have on hand. Carefully follow the storage instructions on these bottles.
SERVING SUGGESTIONS:
Eat your yogurt plain or with your favorite fresh, frozen, canned or dried fruit. Serve by topping it with some HOMEMADE GRANOLA. You can also find lots of recipes that use yogurt as smoothies, dips, dressings, baked goods & main dishes. Experiment and find YOUR favorite ways to use homemade yogurt!
You can also make some YOGURT CHEESE to use in spreads, dips, baking or cooking.

Yogurt Cheese Recipe

INGREDIENTS:
2 to 3 cups of PLAIN YOGURT
DIRECTIONS:
Pour the plain into the Cuisipro Donvier Yogurt Cheese Maker or another similar device. Cover and store in refrigerator for approx 24 hours or until the mixture has stopped dripping and is spreadable. Season it to taste with salt (and dill, herbs, garlic, or whatever you like). Spoon the yogurt cheese into a container and refrigerate.
VARIATION:
Use a SWEETENED AND FLAVORED yogurt to make your yogurt cheese.
SERVING SUGGESTIONS:
Spread on bagels, english muffins, rolls, crackers, etc. You may also use it in place of cream cheese or sour cream in dips etc or in baking.

Baked Oatmeal Bars
Recipe for Baked Oatmeal Bars
Secret ingredient is...YOGURT
Baked Oatmeal Bars

INGREDIENTS:
3 cups rolled oats
1 1/2 cups yogurt
(mix and set aside for about 4 hours or over night)
1 stick butter or margarine (melted)
1/2 cup honey
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp baking soda
DIRECTIONS:
-Preheat over to 325 degrees.
-Grease a 8" x 8" baking pan.
-Mix all of the ingredients together and pour into the baking pan.
-Bake for 45 minutes or until lightly browned around the edges of the bars.
-Serve warm.
NOTE: Get creative add dried fruit and/or chopped nuts.

Flavored Yogurt Recipe

INGREDIENTS:
3 1/2 cups milk (I use 2% milk)
1/3 to 1/2 cup instant nonfat dry milk (Optional. The powdered milk produces a thicker texture and increases the protein content.)
2 to 4 tbsp, honey, maple syrup, chocolate syrup, malt, molasses, or artificial sweetener
Flavorings or fruit (see instructions & note about fruit)
INSTRUCTIONS:
Stir together in a saucepan the milk and powdered milk. Heat to 180 degrees and then stir in sugar, honey, maple syrup, chocolate syrup, malt, molasses, or artificial sweetener. If other flavors are desired, after dissolving the sugar or honey, stir in 1 tablespoon of extract, such as vanilla, lemon, almond or peppermint. Another time, try adding 1 teaspoon of ground spices, such as cinnamon, nutmeg, mace, ginger, or your own special combination.
Cool the mixture to 110 degrees, and stir in 1/4 tsp of culture (*Tribest Yolife Yogurt Starter Cultures - 1 oz bottle). Pour into container, cover and place in **Salton YM9 1-Quart Yogurt Maker to incubate. Incubate between 5 - 10 hours or until desired tartness (I incubate it between 6 and 8 hours).

NOTE ABOUT FRUIT:
If fresh, frozen, canned, or dried fruit is desired, it is best to make such additions to the yogurt after it has incubated. The acid content of some fruits can curdle the milk-yogurt mixture and prevent proper fermentation.
SERVING SUGGESTIONS:
Eat your yogurt plain or with your favorite fresh, frozen, canned or dried fruit. I use a lot of frozen fruit in my yogurt. I just place a little frozen fruit in a bowl and thaw it in the microwave for a couple of minutes on power level 2. Then I add the yogurt and fold it into the fruit. Lastly I top it with a little of my HOMEMADE GRANOLA. . .what a treat! You can use your HOMEMADE FLAVORED YOGURT, PLAIN YOGURT or YOGURT CHEESE in smoothies, dips, dressings, baked goods & main dishes. Experiment and find YOUR favorite ways to use homemade yogurt!

Having read this lens I think I should be making my own yogurt, but it honestly never even occurred to me! I buy plain organic yogurt and use fruit, cinnamon and other things to flavor it. The organic stuff costs more but it's definitely worth paying for -- anything else just tastes weird because of all the additives. I especially can't stand diet yogurt... ugh.
