What is Ezekiel Bread?

 

Ezekiel bread is a bread made from four grains and four beans. Typically it contains wheat, spelt or rye, barley, millet, lentils, great northern beans, kidney beans, and pinto beans. According to the AAOOB website, the specific mixture of grains and beans has been tested by food scientists and found to be complete nutritionally.

Ezekiel bread recipes 

There are several recipes for making Ezekiel Bread. While they are essentially the same, there is some variation in the grains used.

To make this bread you will need a quality grain mill or will need to find the mix already in flour form. Alternatively, you could purchase it, already baked, at health food stores such as Whole Foods or Trader Joe's or buy online from Food For Life Bakery Co. You may need to look in the freezer section to locate this bread.

Ezekiel Bread History 

Ezekiel bread in it's earliest form can be found in the Holy Bible in the book of Ezekiel chapter 4, verse 9 which says: "Also take wheat, barley, beans, lentils, millet, and spelt, and put them into one vessel and make bread of them." (Amplified Bible) In this verse the prophet Ezekiel is told by God to make bread in a certain way and then he lives on water and this bread for 390 days while he resides in the desert.

In 1973, a woman by the name of Carol Levergood was impressed by God to go on a fast for 40 days and pray for Israel. She felt she should eat only the bread described in the book of Ezekiel so she wrote down the grains and beans listed in the scripture and then asked God to show her the correct proportions. In 1981 she wrote a book entitled "God's Recipe" (out of print) about her experiences.

Ezekiel Bread Recipe from Bob's Red Mill 


Ezekiel Bread Recipe

Ingredients:
4 cups Lukewarm Water
1 cup Honey
1/2 cup Oil
2 Tbsp Yeast, Active Dry
Whole Grains:
2 1/2 cups Wheat, Hard Red Berries
1 1/2 cups Spelt Berries or Rye Berries, Organic
1/2 cup Barley, Whole Hull-less
1/4 cup Millet
1/4 cup Lentils (Petite French Green)
2 Tbsp Great Northern Beans
2 Tbsp Kidney Beans (Red)
2 Tbsp Pinto Beans

Stir whole grains together very well and grind in grain mill until mixture becomes flour.

Measure water, honey, oil, and yeast in large bowl. Allow to mixture to sit 5 minutes for yeast to grow.

Add 2 tsp salt and the grain mixture to the yeast mixture- mix well.

Pour batter into two greased pans, 10x5x3 or equivalent. Let rise in a warm place until 3/4" to 1/2" from top edge of pan. Bake at 350°F for 40-50 minutes. Shorten baking time if using shallow pans.

Each loaf makes 12 slices

Each slice contains Calories 230, Calories from Fat 50, Total Fat 6g, Saturated Fat 0.5g, Cholesterol 0mg, Sodium 200mg, Total Carbohydrates 42g, Dietary Fiber 6g, Sugars 12g, Protein 7g.

Grain Mills 

Not all grain mills will be able to grind the beans within the Ezekiel mix. The mills listed below should be able to handle the legumes.

Ezekiel Bread from Cooks.com 

EZEKIEL'S BREAD

8 c. wheat flour
4 c. barley flour
2 c. soybean flour
1 c. lentils, cooked and mashed
1/2 c. millet flour
1/4 c. rye flour
1 1/2 c. warm water
1 tbsp. salt
4-6 tbsp. olive oil
2 packets of yeast in 1/2 c. warm water
1 tbsp. honey

Dissolve the yeast in the warm water and let sit for 10 minutes. Mix the other ingredients. Blend lentils, oil and small amount of water in blender and place into large mixing bowl with remaining water. Stir in two cups of mixed flour. Add yeast mixture. Stir in remaining salt and flour.

Place on floured bread board and knead until smooth. Put in oiled bowl. Let rise until double in bulk. Knead again and cut dough and shape into loaves. Place in greased pans. Let rise. Bake at 375 degrees for 45 minutes to 1 hour.

Yield: 4 loaves.

Bread Machine Ezekiel Bread

1 cup Water
1/4 cup Red Kidney Beans - (cooked and Drained)
1/4 cup Lentils - (cooked and drained)
1 1/2 tablespoons Olive Oil
1 1/2 tablespoons Honey
3/4 teaspoon Salt
2 cups Bread Flour
1/2 cup Barley Flour
1/2 cup Millet Flour
2 tablespoons vital gluten
1 1/2 teaspoons Yeast

Put all ingredients into the bread pan and push start.
