What's for dessert Mom? Are there any good snacks?

My kids ask me these questions all the time. Now they know we don't have dessert every night and that they need to snack on fruit and vegetables too, but when the mood strikes, I'll surprise them!

This lens is an ongoing collection of some fun, quick and easy dessert and snack recipes that we have tried and enjoyed.

Pink Flamingo

A fun family drink loaded with Vitamin C and potassium!

Serves 1

1 frozen banana
1/2 cup fresh strawberries
3/4 cup pineapple juice

Combine fruit & juice in a blender or food processor. Blend until smooth.

Easy No Bake Strawberry Cheesecake

Using a ready made graham cracker crust, one bowl for mixing, easy clean up, it couldn't be easier!

Ready made graham cracker crust
16 ounce package of cream cheese, softened
1 cup powdered sugar
1 package Dream Whip (powdered whipped cream mix)
½ cup cold milk
1 teaspoon vanilla

Prepare whipped cream mix with ½ cup of milk. Blend in softened cream cheese, powdered sugar and vanilla. Pour into graham cracker crust. Chill in refrigerator for at least 4 hours. Garnish top with fresh strawberries.

Dill Dip

Great for parties!

1 cup mayonnaise
1 cup sour cream
1 tablespoon dried dill weed
dash of seasoned salt (optional)

Mix together and chill overnight.

Take a loaf of dark, round bread (unsliced). Tear out the middle and place dip inside. Enjoy!

Fudge

Made with what? Velvetta cheese!

I made this without the nuts and just put the mixture in a 8x8 square pan. Very yummy!

1/2 pound Velveeta cheese, sliced
1 cup (2 sticks) butter
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
2 16-ounce packages of confectioner's sugar
1/2 cup cocoa

1. Melt cheese and butter together over medium heat in saucepan
2. Remove from heat, add vanilla and nuts.
3. Sift together sugar and cocoa in large bowl. Add chesse mixture. Use hands for final mixing!
4. Remove candy from bowl with hands and roll into balls. Add skewers.
5. Refrigerate for 30 minutes and enjoy!

Mini Pizza

These make for a great lunch too. Kids love to make their own.

English Muffin
Pizza Sauce
Shredded Mozzarella Cheese
Sliced Pepporoni

Slice english muffins in half. Spread desired amount of pizza sauce over muffin, add cheese, pepporoni or any other topping desired. Place in oven or toaster oven until cheese melts and muffin is at desired crispiness.

Enjoy!

Very Berry Muffins

These sweet muffins can be made ahead of time and make a great snack!

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
6 tablespoons margarine
3/4 cup sugar
2 eggs
1/2 cup lowfat milk
1 teaspoon vanilla
2 1/2 cups fresh blueberries

Preheat oven to 375. In small bowl combine flour, baking powder and salt. Set aside.

In large bowl cream margarine and sugar. Add eggs, milk and vanilla. Add dry mixture. Mix well. Fold blueberries into mixture. Spray muffin tins with cooking spray or line with paper cups. Pour batter 2/3 full into muffin cups. Bake 25 minutes or until light brown.

Quick Party Mix

Pretzels
Peanuts
Cheerios
M&Ms or chocolate chips

Mix together, place in a bowl and serve!

Quick Salsa Appetizer

Don't forget the nacho chips!

Recipe from Judie Teller, printed in the St. Jude Rosary Altar Society, Budd Lake, New Jersey, Second Edition Cookbook.

8 oz. softened cream cheese
12 oz. salsa (mild, medium - your choice)
¼ cup grated cheddar cheese (yellow or white)
¼ cup grated Monterery Jack cheese
Nacho Chips

Smooth softened cream cheese in the bottom and sides of a glass pie plate. Pour salsa on top until almost full. Sprinkle cheddar and Monterey Jack on top. Microwave 2 minutes, turn. Then microwave 2 more minutes. Dip should be warm, cheese melted. Serve with nacho chips.

BlackRaspberry Smoothie

For one small serving size:

2 scoops Blackraspberry ice cream
1 single serving size flavored yogert (such as strawberry, blueberry, etc.)
1 sliced banana or approx. 1/2 cup sliced fresh strawberries

Put all ingredients in a blender and blend until smooth. A smoothie is easy to make and you can substitute any flavor of ice cream, yogert or fresh fruit depending on what you have on hand. It is fun to experiment with the kids!

Ants on a Log

Kids can have fun helping you make this one!

type=textIngredients needed: celery stalks, peanut butter, raisins

Cut celery stalks in half or in desired length. Spread with peanut butter. Sprinkle with raisins.

Salad Dressing

Low on salad dressing? Chances are you already have these ingredients on hand.

1/4 scant cup vegetable oil
1 tsp. mustard
2 tbsp. sugar
1/4 tsp. salt
2 tbsp. water
1 1/2 tbsp. vinegar

Stir and use.

Fruit Cocktail Cake

My grandmother made this often.

1 1/2 cup flour
1 cup sugar
1 tsp. baking soda
1/4 tsp. salt
1 egg
1 can fruit cocktail
1/2 cup brown sugar
1/2 cup nuts (optional)

Beat egg, stir in dry ingredients, then add fruit cocktail. Pour into 8x8 pan and top with brown sugar and nuts. Bake at 350 for 40 minutes.
