Fairy Cupcakes

It is no secret, Fairies loves sweet things, Fairies loves flowers and Fairies loves shiny things-so what better combination than to make Fairy Cupcakes!

First, what do you mean we can eat these flowers? Making crystallized sugar coated flowers is not as hard as it is time consuming. But in the end, you have a fantastic edible natural beauty!

So let's start with a few edible flowers. These are the ones I have used personally: Borage Flowers, Nasturtiums, Pansy and Roses. For Fairy Cupcakes, I would strongly suggest using the Borage Flowers, Pansy's or Roses.

Since this process is the most time-consuming let's start with a couple of different ways of crystallizing.

One Way: place one egg white into a bowl and add a tiny bit of water. Whisk it until it is completely mixed. By using a new paint brush, gently paint the egg white mixture over the flower and/or a flower petal. Immediately, sprinkle with some fine sugar located in your baking isle at the grocery store. Set the flower on a piece of parchment paper and continue doing the same thing to each flower and/or petal.

Second Way: use ¼ cup cold water and ¼ oz. of unflavored gelatin together. Let it stand for 5 minutes. Add ¾ cup of boiling water and mix well. Set in the refrigerator for about an hour until it is firm but not set. Whisk thoroughly. Gently paint this mixture onto the flowers and/or flower petal, sprinkle with sugar and continue doing the same thing until all of your flowers are done. I personally use the first method, but in my research found the second method so I thought I would add it.

By the time you are done doing all of the flowers, you should be able to go to the back to the first one and turn it over and do the same thing to the other side. This way the whole flower and/or flower petal will be sugar coated.

Once all of your flowers are crystallized, set in the refrigerator and begin making your cupcakes.

Mini Fairy Cupcakes!

Just because we are using a boxed cake mix, does not mean it can't be healthy

One box of plain white cake mix
3-5 egg whites
1/3 cup of canola Oil

Mix well! Line your mini muffin tin with little papers and fill your cups 3/4 full. Bake according to the directions on the box.

I love using the Whipped Frosting because it has less sodium than the other frosting. If you do not have a pastry bag, use a thick baggie and place some frosting in it. Snip the very corner and in a circle pattern add the frosting to the cupcakes. Now for me I would add enough frosting that the cupcake would tilt, so you may want to add as much as you would like.

Take your crystallized flowers out of the fridge and dab a little frosting on them and set in the middle of your cupcake.
