- You are a genius, when it comes to preparing a meal you are wonderful. I don't eat red meat, so chicken and any kind of poultry is going to catch my eye. You not only had the main course (the chicken) you had the side dishes and your rice was impeccable. I obviously had a way to roast chicken, but now I've gained another. You have my thanks for sharing this wonderful menu, this makes a great meal. I hope you are well, and enjoying this holiday season, dear friend. - This menu and recipes look so wonderful I will HAVE to try it and not just vicariously enjoy. The story of Zimbabwe is truly awful. I hope you are all thriving in your new home in Ireland, but hope also that Zimbabwe might find restoration in some future date.

- Your roast chicken dinner looks wonderful. The last time I roasted a chicken I stuffed it with lemon quarters and crushed garlic cloves. Yummy!

- I loe roast chicken! It's one of my favorite meals to make when I have company. I also like roasting the vegetables in the oven as you suggest here, it really brings out the flavors.

- Your stuffing recipe sounds scrumptious, especially to someone who does not like the kind of stuffing typically prepared in the states. I will just have to go about converting the measurements correctly, which doesn't seem like too much of a challenge. Wish me luck!
