Everyone Loved Brownies in the 1900s - and they still do. Fanny Farmer Cookbooks and Other Vintage Cookbooks
She had already produced the Fannie Farmer Cookbook with the recipe for Fannie Farmer's famous brownies dating back to about the time when brownie recipes were first introduced. Some of the other favorite Fannie Farmer recipes are Banana Bread, Apple Pie and her Cream of Tomato Soup.
Fannie Farmer, (23 March 1857 - 15 January 1915) unable to continue her formal education due to health problems at the time, became interested in cooking and later enrolled in the Boston Cooking School. This was at the time in the mid 19th century when domestic science and stressing nutrition was first being discussed and the study of home economics was being developed. She graduated from the Boston Cooking School in 1889 and became the assistant director and later the director of the school. In her cookbook, she stressed proper nutrition for health. The original Fannie Farmer Cook Book is still widely used today. In 1902, Fannie Farmer left the Boston Cooking School to open Miss Farmer's School of Cookery, aimed not at professional cooks but at training housewives. She was a frequent lecturer on domestic topics, and wrote several more cooking-related books before she died in Boston in 1915. The school continued until 1944.
I certainly feel that the time is not far distant when a knowledge of the principles of diet will be an essential part of one's education. Then mankind will eat to live, be able to do better mental and physical work and disease will be less frequent.

Recipe for Fannie Famer Brownies

FANNY FARMER BROWNIES
3 oz. unsweetened chocolate
6 tbsp. butter
1 1/2 c. sugar
3 eggs
1 1/2 tsp. vanilla
1/4 tsp. salt
3/4 c. flour
3/4 c. nuts (if desired)
Butter 9 x 13 inch cake pan. Melt chocolate and butter. Stir until smooth. Remove from heat and add the rest of the ingredients. Mix well. I double this recipe. Bake at 350 degrees for 40 minutes or until dry on top and firm to touch.

Ingredients
* 5 tablespoons butter
* 1/2 cup chopped onion
* 4 tablespoons flour
* 4 cups milk
* 1/2 bay leaf
* 1 1/2 teaspoons sugar
* 1 1/2 teaspoons salt
* 1/2 teaspoon baking soda
* 3 cups tomatoes, chopped (fresh or canned)
Preparation
Melt the butter in a soup pot. Add the onion and cook over medium heat, stirring, until the onion is softened but not browned. Sprinkle the flour over the butter mixture and continue to stir and cook for 1 to 2 minutes. Slowly add the milk, bay leaf, sugar, and salt and continue to cook and stir until slightly thickened. Stir the baking soda into the tomatoes. Add the tomatoes to the milk, and bring just to a simmer. Remove from the heat and put through a strainer. Taste and correct seasonings. Reheat before serving.
Sugar Cookie Recipe
1/4 pound butter
3/4 cup sugar
1 egg
1/2 tsp vanilla
1 Tbsp cream or milk
1 1/4 cups flour
1/8 tsp salt
1/4 tsp baking powder
Preheat the oven to 350 degrees F.
Cream the butter, then gradually add the sugar, beating until light. Add the egg, vanilla, and cream or milk, and beat thoroughly.
Mix the flour, salt, and baking powder together, add to the first mixture, and blend well. Arrange by teaspoonfuls on cookie sheets,
1 inch apart. Bake for 8-10 minutes or until lightly browned.
