"Kid Recipes"

Quesadillas 

Need:

Flour tortillas
Shredded cheese (I buy a four cheese mexican mixture at the store, cheddar and a non-sharp white cheese if you want to experiment yourself)
If desired, chicken or thinly cut steak
If serving adults, onions and maybe some red/green peppers or peppered cheese

Directions:

If adding meat:

1 Pan fry chicken or thinly steak on medium high until partially cooked.
2 Cut meat into small thin strips.
3 Cut peppers or onions into small thin strips if adding.
4 Add all back to pan and stir fry on high until meat is thoroughly cooked.

After meat is prepared or if no meat:

1 Heat frying pan to medium high heat.
2 Add a tortilla.
3 Sprinkle cheese onto tortilla.
4 Add meat and other optional ingredients.
5 Put another tortilla on top.
6 Wait 5 mins and flip.
7 Press down to flatten with a spatula.
8 5 more minutes and done.
9 Cut like a pizza or for kids get creative. Cookie cutters are always good.

Home-Made Chicken Nuggets 

Need:

Boneless chicken breast or tenderloin
All purpose flour
Eggs
Garlic salt
Olive oil (or vegetable oil)

Directions:

1 Add flour to a large bowl.
2 Add hefty amount of garlic salt to flour and mix well. It took me a few times to get the right mixture to my taste.
3 Crack a couple of eggs in a separate small bowl and scramble. Number depends on how much you want to cook, but two can do a lot of nuggets.
4 Cut breast meet into small chunks.
5 Place cut chicken in eggs and mix until all chicken is thoroughly covered with egg.
6 Take chicken from eggs and drop in flour. Mix until thoroughly covered with flour.
7 Have pan with 1/2 inch of olive oil heated to medium/medium high.
8 Add nuggets and cook around 5 minutes.
9 Turn nuggets over once and cook another 5 minutes or until done.
10 Place nuggets on plate with paper towel to drain oil.

"Adult Recipes"

Chicken Parmesan 

Need:

All Purpose Flour
2 Eggs
Garlic Salt
Boneless Skinless Chicken
Linguine
2 Cups Mozzarella Cheese
Olive Oil
1 Jar Ragu Parmesan and Romano Spaghetti Sauce

Directions:

1 Boil linguine.
2 Add plentiful amount of flour to large bowl or plate.
3 Add garlic salt to the flour. Be generous and then add some more. Then mix.
4 Crack 2 eggs into a bowl and scramble them.
5 Add olive oil to frying pan until about a 1/2 inch layer is in the pan. Bring to medium heat on stove.
6 For each piece of chicken, dip in eggs until thoroughly covered. Then gently roll in flour until coated. Place in frying pan. Cook for 5 minutes. Flip. Cook another 5 minutes. Flip. Cook another five minutes. Remove and set on plate with paper towels to remove excess oil.
7 Add linguine to a new large frying pan. Mix in half of spaghetti sauce and stir.
8 Add chicken on top. Add other half of spaghetti sauce on top of chicken and spread around.
9 Sprinkle mozzarella cheese on top of chicken and linguine.
10 Cover pan and cook on medium heat for 5 minutes to melt the cheese and warm the spaghetti sauce.

Shrimp Scampi 

Need:

Linguine
1 lb shrimp, peeled and deveined
1 stick of butter
1/4 cup of olive oil
3/4 cup of white wine
1/4 cup of minced garlic
lemon juice
salt
oregano

Directions:

1 Boil linguine.
2 Add olive oil, stick of butter, minced garlic and wine to a medium size frying pan and bring to a boil over medium-high heat.
3 Turn heat down to medium.
4 Add plentiful salt and a little oregano.
5 Add one squirt of lemon juice (or a tablespoon).
6 Add shrimp and cook until done stirring a few times. It does not take very long for the shrimp to cook.
7 Serve the shrimp and sauce over the linguine.

Chicken and Pasta 

Need:

2 boneless chicken breasts or 5 boneless chicken thighs
Linguine
1 stick of butter
2 tablespoons of lemon juice
Garlic salt
Oregano
Parmesan cheese

Directions:

1 Boil linguine.
2 Pan fry chicken (no oil or breading) on medium high until almost cooked.
3 Dice chicken into small pieces and put back in frying pan with butter.
4 Stir until the butter melts and then add lemon juice, oregano and garlic salt. A small amount of white or marsala wine is optional.
5 Continue to stir every so often until chicken is fully cooked.
6 Drain water from linguine.
7 Mix linguine with chicken and sauce.
8 Add generous amount of parmesan cheese and stir.

My Chicken & Rice Dinner

1 package of chicken tenders
1 can of cream of mushroom soup
1 half onion (or more to taste) diced
1 bag of boil in bag rice
salt & pepper to taste

Cook rice as directed.
Cook chicken in pan with a little butter or oil til cooked throughly with the diced onion.
Put in can of cream of mushroom soup and heat til warmed up (I usually only add 1/2 can of water instead of whole can as directed on the soup)
Add the rice and mix throughly and serve.
