What Are Your Favorite Thanksgiving Pies?
Everyone has there own favorite thanksgiving pie recipes. On this lens I'll introduce you to some of my favorites.
There's something about this time of year that makes you want pies (well I do) more than at any other time. Perhaps it's the cooler weather or maybe it's just because of the abundance of lovely fruits that you can use. Apples, pumpkins, all the lovely berries, pecan, the list goes on. Whatever the reason there's nothing like the aroma of fresh baked pies wafting through the house. I'm getting hungry just thinking about it.

It's All In The Pie Crust

For years I could not make a decent pastry crust. I don't know why but it never turned out quite right. Then I found this recipe. It's easy and it works. I use it for all my sweet pies now. You will see that it is not really a pastry but more of a shortcake recipe. I hope you like it.
Ingredients
- 4oz butter
- 2 tablespoons castor sugar
- 1 lightly beaten egg
- 8oz SR flour
- sifted
- 2 tablespoons cold water
Instructions
Cream the butter and sugar, using an electric mixer, until light and fluffy. Add egg and flour and stir together to make a firm dough. You can add a little water if necessary although I do not usually find it necessary. It's a good idea to put the dough in the fridge for about 15 - 30 minutes before you roll it out. Otherwise it can be a little sticky to handle.
Divide the mixture in half then roll each half between two sheets of greaseproof paper or gladwrap.
Line a 9" pie plate with one half. Put in chosen pie filling then top with the second half. Crimp the edges of the pie and put two slits in the top to allow for the steam to escape.
You can use this recipe for all the delicious pie fillings listed below or you can use a bought pastry case.

Pumpkin Pie
Favorite Thanksgiving Pumpkin Pie
This is the best ever pumpkin pie recipe. Although it takes a little more trouble in preparation, the results are well worth it. It's scrumptious. You can half the above dough recipe or use store bought pie crust.
You will need:
Ingredients
- a butternut pumpkin (squash) about 2lb in weight
- 3 tablespoons of melted butter
- 1 cup heavy cream
- 2 large eggs beaten
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/4 teaspoon allspice
- 1/2 teaspoon ground ginger
- 1 level teaspoon cinnamon
- 3 tablespoons maple syrup
- 1/2 quantity of above pie dough.
Instructions
Cut the pumpkin in half lengthwise. Place on a baking sheet face side up and bake, basting occasionally with butter, at 350 degrees for about 50 minutes or until the pumpkin is tender.
Allow to cool slightly then remove and discard the seeds. Scoop out the flesh and discard the shell. Mash the flesh.
You need 2 cups of the mashed pumkin. Add 1 cup of cream and all the remaining ingredients. Mix well using a whisk. Pour ingredients into prepared pie shell and bake at 350 degrees for 40 - 50 minutes or until set in the middle. You can protect the edges with foil if necessary.
Cool completely and serve with whipped cream.

Thanksgiving Blueberry Pie
I love blueberries. When I was little grandma used to send us out to pick them, but we often ate more than we brought back. Boy, then we were in trouble.She made different things with them, but a blueberry pie was always my favorite.
Here's what you'll need:
Ingredients
- 1/2 cup sugar
- 1/3 cup all purpose flour
- 1/2 teaspoon cinnamon(optional)
- 1/4 teaspoon salt
- zest and juice of 1/2 a lemon
- 5 cups blueberries (fresh or frozen)
- 1 tablespoon butter
- 1 quantity of above dough recipe
Instructions
Mix all ingredients (except the butter) together and pour into prepared pie case. Dot with butter and cover with remaining pastry. Put 2 slits in top and then bake at 425 degrees for approx. 40 minutes. Protect with foil if necessary.

Apple And Cranberry Pie For Thanksgiving

You can't go past apple pie at this time of year. Here's one with cranberries, but you can easily substitute any other berry that you may prefer. I like it also with red currants.
Ingredients
- 4 medium size apples( I prefer Granny Smiths)
- 2 cups cranberries (fresh or frozen)
- 1 cup sugar
- 2 tablespoon flour
- prepared or bought pastry
Instructions
Peel, core and slice the apples thinly.
Combine all ingredients, mixing thoroughly, then fill prepared pie case. Top with other half of pastry and crimp the edges. Put two slits in the top to allow steam to escape. Bake at 425 degrees for about 40 minutes.

- We love pumpkin or apple pie. My mom (mum) enjoys making apple pies and tucks them in the freezer for the holidays. (^^..^^)

- When I lived in Australia, I had a terrible time searching for pumpkin pie mix in the stores. We finally made it from scratch using a huge Queensland blue pumpkin.
